Iced Mint Mocha - Every bit as indulgent as a coffee house drink, without the coffee house price!
You guys!! I've gone and done it. I went and got myself in quite a predicament! Let me give you some back story first.
Way back when I decided to give up my job and stay home with the kids (about 5 years ago, after my youngest was born), I made a conscious decision to give up some of my frivolous treats.
Top of the list, just above weekly manicures, was buying coffee from coffee shops. No biggie. I can make it at home, I say. I won't miss it at all, I say.
I lied.
I'm a liar.
I'm a rotten liar, I must be because that was all fine and well for about the first two years. Now, I don't know what happened but I find myself hitting up a coffee shop at least twice a day! I know! Not just any coffee shop either, the $$$ kind.
Ugh. I'm despicable.
Okay, I'm going overboard.
Maybe.
Anyway, the reason I'm telling you all this is that the other day, I was with my kids and decided to hit up a coffee shop. And then something happened. They both wanted drinks too. Not coffee drinks of course. But foofy, whipped cream on top, frozen concoctions geared towards kids and guess what? Those stinkin drinks were over five bucks a piece!!!
With summer looming around the corner, I decided I had to find a fix. I can't be spending over $15 a day in a coffee shop. But man, I do love those iced concoctions, especially in the summer. The kids are with me all summer, so you see my problem now? Kids + Coffeehouse = --$$.
As I was mindlessly wandering around Walmart with the kiddos, trying to create a plan of how I will get my summer fix without taking out a small loan, it hit me. Or, rather, it was right in front of me in the refrigerator aisle. I would make my own coffee house style drinks at home, using International Delight® Iced Coffee.
I grabbed both the Mocha and the Caramel Macchiato varieties and headed home to see what I could come up with.
Even though the International Delight® Iced Coffees come ready to pour over ice and serve, I thought a little mint might be the little touch to take it over the top. Minty coffee is my favorite in the summer.
This super easy Iced Mint Mocha was just as good as anything in the coffee shop and even better was that it didn't cost a fortune and I didn't have to drag the kids out of the house to get it! Now, that's a win/win/win in my book!
To get this tasty Iced Mint Mocha, first fill a glass with ice. Place about ⅛ teaspoon (more or less if you like) of mint extract and then pour the International Delight® Mocha Iced Coffee over the ice. If you really want to take it over the top and get indulgent, you can then finish it off with some whipped cream and/or chocolate syrup.

Iced Mint Mocha
Ingredients
- ice
- ⅛ teaspoon mint extract
- International Delight® Mocha Iced Coffee
- whipped cream
- chocolate syrup
Instructions
- Fill a glass with ice.
- Add ⅛ teaspoon mint extract to cup with ice. Use more or less mint for your taste preference.
- Pour International Delight® Mocha Iced Coffee over ice and stir to combine with mint.
- If desired, top with whipped cream and/or chocolate sauce.
- Enjoy!
PS. In case you're wondering what I did with the International Delight® Caramel Macchiato Iced Coffee, I just poured it over ice and enjoyed as is. Clearly, someone else in my house is enjoying it that way too because more than half the carton is gone. I suspect my husband.
