    Individual Shepherd's Pie {made from leftovers} - Totally transform last night's beef roast and veggies into a fun and delicious new meal the entire family will enjoy.

    I've been making variations of this Shepherd's Pie for years.  Basically, whenever I made a roast beef type meal, it gets transformed into a Shepherd's Pie.  The best thing about this recipe (other than it tastes awesome) is how versatile it is.  You really have to make this one your own, depending on what veggies you have leftover.  I had prepared tons of roasted veggies for Easter, so I had leftover roasted red onions, asparagus, green beans and sweet potatoes.  I had broccoli and corn too, but I decided enough was enough and stopped while I was ahead.

    I think I already mentioned to you that this year, for Easter, I served Prime Rib (drooling just thinking about it again).  We had tons of leftovers because I can't just buy a small roast, I had to buy one that was way too big for us.  It's a curse.  I'll never be able to cook just the right amount.  I'll always make extra.  I blame the Italian in me.

    The day after Easter, I made an Au Jus and we had French Dip Sandwiches (slurp, yum).  Since we still had leftovers even after that, I knew the way to go was a casserole-ish type dish.  Since I hadn't yet put away my soup crocks, I decided using them would be a cute serving idea.

    If you don't have individual bowls like these, you can just plop it all into a casserole dish and bake it as a family style meal. No big deal.

    I started this meal by cubing my leftover beef and putting it in a pan with some butter.  I added my leftover veggies and leftover gravy.  I only cooked it about 5 minutes to warm everything up.  While I was warming the filling, I prepared some microwavable mashed potatoes.  If you have leftover mashed potatoes, even better, use those!  I am guilty of keeping a packet or two of the instant stuff for instances like this.  I scooped the filling into the baking dishes and topped with the mashed potatoes.  I even put a small dab of butter on top of the potatoes.  Pop the whole thing under the broiler for a few minutes and that's it.  Dinner.  Done.  Easy, right?

    Ingredients
      

    • 1 T butter
    • 2 C leftover prime rib or other beef roast, cubed
    • 2 C leftover vegetables chopped
    • 1 C leftover gravy
    • 2 C mashed potatoes
    • Non stick spray
    • Optional: 1 T butter

    Instructions
     

    • Preheat oven to broil.
    • Melt butter in a large non stick pan over medium heat with cubed beef. Add in vegetables and gravy. Cook, stirring often, just until warmed through, about 5 minutes.
    • Spray the inside of individual baking dishes with non stick spray. Spoon the beef/veggie mixture into each baking dish. Top each one with mashed potatoes. If desired place a small dot of butter on top of the mashed potatoes.
    • Place under broiler until mashed potatoes are browned, about 3 minutes.
    • Enjoy!
