    Lemon Herb Rice

    This recipe for Lemon Herb Rice is simple yet delicious. This rice recipe is a favorite side dish to chicken recipes, pork tenderloin or chop recipes, steak and even things like homemade chicken nuggets (or frozen, I won't judge).

    The combination of tangy lemon and fresh herbs makes for a flavorful dish.

    Customize this herb rice recipe to your own taste preference or to the flavor profile of your main entree.

    The lemon flavor is subtle because I'm using lemon zest but feel free to add a little fresh lemon juice if you want more of a zing from the lemon.

    Ingredients

    • Rice - long grain white rice
    • Butter
    • Vegetable broth
    • Garlic
    • Herbs - fresh oregano, fresh rosemary and fresh thyme or whichever you prefer
    • Lemon - zest but can also use the lemon juice for more lemon flavor
    • Salt & Pepper

    Cooking instructions

    Bring the broth to a boil and add then add the rice, salt, black pepper and garlic.

    Cover, reduce heat to a simmer and cook until rice is tender, about 20 minutes.

    Stir in butter, herbs and lemon zest (and juice if using) and its ready to serve.

    Substitutions

    Not a fan of the herbs I used? No problem, try a combination of some of these:

    • parsley
    • basil
    • tarragon
    • chives

    Want to give this garlic lemon herb rice a protein kick? Try using a high-protein bone broth in place of vegetable broth. Just be sure to use one that you like the flavor of. I prefer a homemade bone broth over a store bought.

    Ingredients
      

    • 1 Cup long grain rice
    • 2 Cup vegetable broth
    • 2 cloves garlic minced
    • 1 Teaspoon freshly chopped oregano
    • 1 Teaspoon freshly chopped rosemary
    • 1 Teaspoon freshly chopped thyme
    • 1 Tablespoon lemon zest
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper freshly cracked

    Optional

    • 2 Tablespoon fresh lemon juice

    Instructions
     

    • Place broth in a saucepan over high heat. Bring to a boil, stir in rice, salt, black pepper and garlic. Cover and reduce heat to simmer. Cook 20 minutes. Remove cover and stir in butter, herbs and lemon zest (and juice if using).
