    Chewy Peanut Butter Cereal Bars  -  A simple recipe requiring only 3 easy ingredients resulting in a super chewy breakfast/snack bar.

    Are your kids back in school yet?  Mine went back this past Wednesday!  It's bittersweet for me.  We do so much and are on the go all summer that I'm exhausted, physically and mentally and am glad for the small break.  But, the other part of me knows that time goes by quickly and we won't get these days back and I just want to stay in our little summer family cocoon a while longer, having so much fun together.

    With back to school comes a whole new slew of issues; getting up early, feeding them breakfast, packing snacks and lunches etc.  My son doesn't love to eat first thing in the morning so it's always a struggle.  The only thing I can usually get in him is a breakfast bar or a granola bar.

    I thought now that they are off and running I would try to get creative with cereal again.  Remember, I made energy bites out of Post Great Grains® cereal last month?  I grabbed another box and decided to make a granola bar.  I'm not sure it's technically a "granola" bar so I'm calling it a cereal bar.

    Just like before I used the variety which includes raisins, dates and pecans.  And also just like before I'm using minimal ingredients, so that should be good on your wallet.  Buying all those nuts and dates separately gets expensive.  I like the value in these healthy cereal brands.  See, I'm always watching out for your bottom line.  You're welcome.

    Before you get going, let me warn you, these cereal bars are very soft.  I mean, soft enough that you have to store them in either the fridge or the freezer.  I've done both.  I like them straight out of the freezer but my husband is gobbling them right out of the fridge.  If they are left out for a long period of time they will fall apart.  Don't worry though, then you have a delicious little crumble.  Look at me all, glass is half full today.

    So far I've made two batches of these cereal bars.  I sent batch 1 down to my friend who lives in the neighborhood for her kids (much to my husbands dismay when he went looking to snack) and we kept batch 2 for ourselves.

    These cereal bars make a great quickie breakfast or after school snack.  They contain all kinds of good things that will keep them going if they have activities to rush to after school.

    There are six varieties of Post Great Grains® and I think just about all of them would work out well in these cereal bars.

    Chewy Peanut Butter Cereal Bars

    Ingredients
      

    • 6 C Post Great Grains® Cereal rains, dates & pecans
    • 1 C peanut butter
    • ½ C honey

    Instructions
     

    • In a small saucepan over medium/low heat stir together peanut butter and honey until smooth.
    • Place cereal in a large bowl and pour peanut butter into bowl. Stir well to mix.
    • Once peanut butter mixture is well incorporated, spread mixture on a lined baking sheet.
    • Wet hands slightly (to avoid sticking) and push down mixture to pack it in tight.
    • Place in freezer for 30 minutes.
    • Cut into bars or squares using a sharp knife or a pizza cutter.
    • Store in refrigerator (or freezer).
