    Sausage Pasta with Onions and Peppers in the Instant Pot

    Sausage Pasta with Onions and Peppers in the Instant Pot - Italian style sausages, cooked quickly in the instant pot with onions and peppers and tossed with pasta.

    You know that weird texture that slow cookers give sausages?  Yeah, well that doesn't happen with the Instant Pot.

    I'm sorry.

    If you don't have an Instant Pot, I'm truly sorry for you.  I've gone on and on lately about how amazing they are, so I won't do that now.  I'll just say how happy I am that I finally gave in and bought one.

    Okay, moving on.

    First, I browned the sausage, using the saute function.

    Next, I added diced tomatoes, broth, Italian seasoning, onions and peppers and set the Instant Pot to 20 minutes.

    While the Instant Pot was making magic, I cooked my pasta on the stovetop.  I'm sure there's a way to dump the pasta right into the Instant Pot, but I was feeling lazy and didn't want to figure out the liquid that would be needed.  I apologize.  But whatever, this is still way easier than if I were making it all on the stovetop.  One of these days I'm sure I'll figure it out with the pasta inside and I'll update you.  I promise.

    Once the Instant Pot was done making magic, I removed the sausage and sliced it and then tossed it back into the pot and also added the cooked pasta to the pot.  Finally, I switched the Instant Pot to saute mode just to help bring it all together for a minute or two before serving.  I always like to cook my pasta in with the sauce before serving.

    If you don't feel like making pasta, feel free to just use some tongs to place the sausage (prior to cutting) into sub rolls with the onions and peppers.  This also is great served over rice.

    Full meal, ready in under a half hour and made easy with the Instant Pot.  Pasta can be cooked on the side or skipped altogether and use the sausage, onions and peppers as a sandwich

    Ingredients
      

    • 1 T olive oil or coconut oil
    • 5-6 links Italian sausage
    • 14.5 oz can diced tomatoes do not drain
    • ½ C chicken broth or water
    • 2 bell peppers I used 1 green and 1 orange, sliced
    • 1 sweet onion sliced
    • ½ teaspoon garlic powder
    • ½ teaspoon black pepper
    • 1 teaspoon Italian seasoning blend
    • 8 oz long pasta

    Optional:

    • parmesan cheese
    • Chopped parsley

    Instructions
     

    • Set instant pot to saute mode. Once hot, add oil and sausages. Cook, turning occasionally, just a few minutes until sausage is browned.
    • Turn off saute function and add in tomatoes, broth, garlic powder, black pepper and Italian seasoning. Place the sliced onions and peppers on top.
    • Lock lid in place and turn valve to sealing. Use manual setting and change time to 25 minutes.
    • Prepare pasta, according to package instructions while sausage is cooking.
    • When 25 minutes is up, release steam with quick release. Remove the sausage from the pot and slice. Return sliced sausage back to pot and set to saute mode. Stir in cooked pasta. Cook on saute, tossing to combine well just 2-3 minutes.
    • If desired, top with parmesan cheese and/or parsley before serving.

    Notes

     I don't add salt to this dish because I season my pasta well with salt during cooking.  If you don't salt your cooking pasta, feel free to add salt to the sausage mix.

      I'm IP obsessed... and my family doesn't mind one bit. No failures yet and I can't wait to try this one next! I'd love to hear if you do work out how to cook it with the pasta in the pot. For me, IP is all about minimizing kitchen mess 😉

        I'll be trying it with the past soon. My problem is that I haven't had great luck w/ a long noodle pasta. It always is stuck together. Once I work that part of it out, I'll update the recipe.
