    Slow Cooker Sausage Onion and Pepper

    No pre-cooking or browning necessary in this recipe for Slow Cooker Sausage Onion and Pepper. Toss all ingredients called for into the slow cooker, set it and done.

    Is This A Freezer Meal?

    This recipe absolutely can be prepped ahead of time and stored in the freezer. To do so, place all ingredients in a gallon-sized freezer storage bag and freeze, laying flat.

    Move the bag from the freezer to the refrigerator the day before you'd like to prepare in the slow cooker.

     

    Preparing Slow Cooker Sausage Onion and Pepper

    This is really so easy, it's almost difficult to post "steps".

    First, stir together all ingredients in the slow cooker. Set to low for 6-8 hours. My slow cooker tends to cook on the hot side so I cook for 6 hours.

    After the timer goes off, remove the cover and stir.

    • pasta
    • creamy polenta
    • rice
    • in a sandwich roll
    • as is with a crusty loaf of bread

    Which Type of Sausage Do I Use?

    Italian sausage is the way to go. You can use Sweet Italian, 
    Spicy Italian, Garlic Italian or a combination. I prefer to use 2 links of spicy and 3 of the Sweet Italian.

    • Slow Cooker

    Ingredients
      

    • 5 links Italian sausage (mild, spicy or a mix of both) - cut into bite sized pieces
    • 1 yellow pepper, roughly chopped
    • 1 red pepper, roughly chopped
    • 1 large red onion, roughly chopped
    • 1 teaspoon dry thyme
    • 2 teaspoon minced garlic
    • 28 oz canned diced tomato
    • 1 T olive oil

    Instructions
     

    • Combine all ingredients in slow cooker and stir - cover.

    • Set timer for 6-8 hours on low.
    • When timer is up, remove cover, stir and serve.
