    One Pot Chicken & Rice {with vegetables} - Chicken, fresh vegetables and Arborio rice are all cooked together in one pan to create a delicious weeknight meal with minimal clean up!

    I am a lover of risotto.  Not just any risotto.  It has to be prepared properly.  Nothing bugs me more (about food) than someone calling a dish risotto when it's not prepared as a risotto!  For those of you who aren't familiar with the method, the basic rules are to first cook your rice (traditionally Arborio rice) in a butter and onion mixture, then deglaze the pan with a little wine and then add warmed stock or broth in small increments.  Adding the liquid this way creates the creamy texture one looks for in a proper risotto.  Simply using Arborio rice does not make the dish a risotto.  So please know that I am in no way calling my dish a risotto, even though it looks like one.

    Okay now that I've got that big complaint-a-roo out of the way, let me tell you about this not risotto dish.

    One Pot Chicken and Rice {with vegetables}

    As usual with my dishes, this one is pretty versatile.  You can really change up the veggies to be anything you have on hand.  I chose carrots and asparagus because they're bright and I thought it would be pretty.  I was going to throw in mushrooms but we're having mushrooms tomorrow night and I don't like to overload the family on an ingredient they don't love.

    So I started this dish by browning some chicken and softening the shallots (or use onions) and veggies in olive oil.  I then added a little butter to the pan and poured in the rice and stirred that around for about 2 minutes.  Then I added the stock.  All of it.   See why it's not a risotto.  I didn't have time to be stirring and pouring and all that tonight.  I let it all simmer together for about 20 minutes and then I added a little cheese and done.  Easy, right?  I know.

    One word about Arborio rice.  It bulks up when cooking.  I use 1 cup of the rice and it easy feeds my family.  I think 1 C is sufficient for a family of 4, maybe 5 if your kids don't eat a ton.

    Ingredients
      

    • 1 T olive oil
    • 2 C boneless chicken breast cubed
    • 2 teaspoon Italian seasoning
    • 2 large shallots sliced
    • 2 large carrots diced (about 1.5 C)
    • ÂĽ teaspoon black pepper freshly ground
    • 2 T butter divided
    • 1 C Arborio rice
    • 3 C vegetable stock or broth (chicken is fine too)
    • 10 stalks asparagus chopped (about 1.5 C), rough stems removed
    • ÂĽ C parmesan cheese freshly grated

    Instructions
     

    • Heat oil in a large skillet over medium/high heat. Season chicken with Italian seasoning and add to pan. Cook until browned on all sides, stirring occasionally.
    • Add shallot, carrot and black pepper to the pan and cook just until softened, about 5 minutes, stirring often.
    • Push the chicken and veggies to the side of the pan and add 1 T butter and rice. Stir the rice to coat with the butter and cook 3 minutes, stirring and incorporating with the veggies. Pour the stock into the pan. Bring just to a boil and then reduce heat to a simmer and simmer uncovered, about 20 minutes.
    • Stir in asparagus and cook another 5 minutes.
    • Stir in remaining 1 T butter and ÂĽ C parmesan cheese.
    • Check for seasoning and add salt/pepper to taste if desired.
    • Serve immediately.
    • Garnish with fresh parsley if desired.

      I grew up with a chicken and rice dish that was very similar to this - so I consider it pure comfort food. It really looks delicious. (And I feel the same way about risotto - and so many other dishes/preparations, for that matter...)

      Needed something to use up Chicken, Carrots, asparagus. And some Celery. Made this (added the Celery) and it was delicious! The rice was creamy, just enough cheese, and not too heavy! Will definitely be making this again!
