One Pot Turkey Kielbasa Hash - A 30 minute meal made in one pot, perfect for a busy weeknight meal.
I have a big thing to celebrate today. Well, probably not big to you, but after the winter we've had here in MA, it's big to me. There is officially NO SNOW left in my yard! Woo hoo! Seriously a few days of 60 degree sunny weather and there were still two mounds hanging on but as of today, it's official, we are snow free!
With the nicer weather I am trying to spend as much time outdoors as possible. I mean, it's not hot out yet, but it's nice enough to be out with sweatshirts for hours on end. With all this outdoor time, I'm getting less and less motivated to cook a big time consuming meal. We have yet to get propane for our grill so grilling is out. So in the meantime, I'm sticking to quick 30 minute meals and/or one pot meals. Making a meal into a one potter is key to saving time on cleanup.
This Turkey Kielbasa is both a 30 minute meal and a one pot meal. I know! You're welcome.
I've told you before, Kielbasa is one of those things I almost always have in the fridge. When it goes on sale, I stock up. They keep for a good amount of time in the fridge or you can freeze them (but I always forget to defrost).
Here's the thing with 30 minute meals - you've got to manage your time. Sometimes, my friends say "Christine, you're out of your mind, that dish took me way more than 30 minutes" and my response is "well then you did something wrong". Ha! Okay, I don't say that but I'm thinking it.
To keep this meal a 30 minute meal, while the potatoes are cooking (which is the longest part), I use that time to chop my onions, peppers and slice the kielbasa. No added prep time if you do that, right? See how easy it is to shave a few minutes off your kitchen time?
I also add a little broth to speed up the cooking process of my potatoes. Some people don't like to do that, but when I don't ,I end up with burnt edges and raw, hard potato on the inside. Adding a bit of broth helps them cook through and then when the liquid is evaporated they brown up with the oil we've added. Again, saving time.
Speaking of saving time, let me just get to the recipe already because there is a serious bubble gun duel about to go down and I must get outside to referee these two little hooligans I call my kids.
**Recipe Notes:
- If you're not a big fan of turkey kielbasa, use any variety of smoked sausage/kielbasa that you prefer.
- Place a runny egg atop the hash if desired.
- If your skillet isn't large enough to allow the kielbasa to brown, remove the potatoes from pan before adding kielbasa, onions and peppers and then return the potatoes to skillet after the kielbasa has browned.

One Pot Turkey Kielbasa Hash
Ingredients
- 2 large potatoes diced
- 1 T olive oil
- 1 sweet onion diced
- 1 bell pepper diced
- ÂĽ C vegetable/chicken broth
- 1 lb turkey kielbasa
- 1 T butter
- ½ teaspoon salt
- ÂĽ teaspoon black pepper
- ½ teaspoon smoky paprika
Instructions
- Add diced potatoes and broth to a large skillet over medium/high heat. Drizzle olive oil over the potatoes and allow the potatoes to cook until tender and browned, about 15 minutes (as the broth evaporates, the olive oil will prevent sticking and help with browning). Stir occasionally.
- Add onions, peppers and kielbasa to the pan, along with 1 T butter.
- Season everything with salt, pepper and paprika.
- Cook an additional 10 minutes or so until kielbasa is cooked through and vegetables begin to soften, stirring occasionally.
- If desired serve with an egg on top.

I've never seen that vegetarian version. I've seen the "sausage" and "chicken" but never kielbasa! so many options these days!
