    Strawberry Salsa Grilled Pork Chops

    I hope you all are having a wonderful long weekend.  We didn't go to even one cookout or party, I can't believe it.  We just hung around the yard, gardening and we got the pool opened and little things like that.  And we bought a chiminea, so we made our first fire.  So relaxing.

    I finished up the planting of my garden.  This year I've gotten these planted: eggplant, cucumber, pumpkin, corn, brussel sprouts, celery, carrot, peas, zucchini, summer squash, green beans, basil and cilantro.  I'll get my parsley an thyme out there soon.  I've been on the fence about growing strawberries.  A few years ago I planted them, in a whiskey barrel and we only got a few berries out of it and it attracted the birds like crazy.  If you have a tip for me on that, I'd love to hear it, because I'd love to grow them successfully.

    Speaking of the strawberries, you are going to wonder if the flavors in these Strawberry Salsa Grilled Pork Chops actually go well together, and that's okay, question away, but try it and your palette will thank you.

    This was definitely another of those recipes that I served to the family with a cautionary 'if this doesn't work, we can order pizza".

    My husband definitely wasn't confident, he was sort of reluctant to eat it, I could see it all over his face but once he took a bite, he praised it over and over.  The flavors just work and everything just sort of pops full of flavor and freshness.   Making these Strawberry Salsa Grilled Pork Chops definitely has me thinking that I need to use fruit more in my savory dishes.

    I adapted the Strawberry Salsa recipe from a Strawberry Tomato Salsa recipe I found on Taste of Home.  My family and I are not huge into tomatoes (ssshh, don't tell my Italian family), so I opted for more strawberry and less tomato.

    Strawberry Salsa Grilled Pork Chops

    Ingredients
      

    • 1 pint fresh strawberries halved the long way and then cut into half moon slices
    • 1 pint cherry tomatoes quartered
    • 3 green onions chopped
    • ÂĽ C cilantro fresh, chopped
    • 3 T olive oil
    • 1 T balsamic vinegar
    • ÂĽ t salt
    • 4 boneless pork chops
    • Salt and pepper

    Instructions
     

    • Place strawberries, tomatoes, green onions and cilantro in a bowl, stir gently.
    • In a small bowl whisk together the oil, vinegar and salt. Pour mixture over strawberry mixture. Stir gently to combine. Refrigerate while cooking pork.
    • Preheat grill on medium heat for 10 minutes.
    • Season pork chops generously with salt and pepper.
    • Add pork chops to grill, reduce heat to low and cover. Cook about 6 minutes per side or until thermometer reads about 150.
    • Remove chops from heat and allow to rest 5 minutes.
    • Spoon salsa over pork just before serving.

      This looks absolutely fantastic! I love fruit and balsamic together in a sauce and add in the cilantro and I'm all for trying it. We grill a lot all year round living in Florida and this one will definitely be on my table soon. Good luck with the garden.
