    Grilled Chicken and Raspberry Spring Salad

    Did you all have a nice long weekend?  We had a great one.  My husband has been working so much lately, it was nice to have him home for 3 days, without him having to answer to emails, text messages and phone calls.  I know the kids were happy.  Little Nora was glued to his hip all weekend, calling him "MY Daddy".

    A fun thing we did this weekend was host a game night.  I am such a board game addict.  I'm a tad bit competitive.  Okay, maybe a little more than a tad ;-).  We had a great night, the only down side is I definitely overindulged.  We had pizza, chips and dip, beer and other various junky delicious snacks.  We also ended the weekend with s'mores by the fire and some sangria.  Fun but maybe not the healthiest of weekends so I'm glad to get back on track with this Spring Salad.

    I have been on kick of combining meat and fruit.  It's a great way to brighten up your dishes for the spring.  Yesterday, I shared with you my Strawberry Salsa Grilled Pork Chops and today I introduce you to a Grilled Chicken and Raspberry Spring Salad.  During the fall and winter months I add a lot of dried fruits to salads, so it makes sense to swap those out for fresh fruits while they're in season.

    These types of salads are great, because you can swap ingredients for what your family would prefer.  I know I tell you all the time these are my favorite types of recipes.  You could easily replace the raspberries with strawberries or blueberries, or even blackberries.  If you are looking for a meatless option, just leave out the chicken.

    Let's talk dressing for a minute.  I sort of hate that I didn't make my own dressing for this, but the whole idea was I wanted a quick meal because the kids were in the kitchen being huge pains, so life threw me a curveball.  This salad doesn't really need much dressing because the raspberries give it a ton of flavor, I recommend a light vinaigrette.  The one I used was a honey white balsamic dressing and it paired perfectly.  When I make this again, I will come back and post a homemade dressing, I promise, well probably, maybe if I think of it.

    Ingredients
      

    • 5 oz Package Spring Mix Salad
    • 1 Cucumber diced
    • 1 Avocado diced
    • 2 Boneless Chicken Breasts Grilled and Diced
    • 1 Pint Raspberries fresh

    Instructions
     

    • Place lettuces on platter. Top with cucumber, avocado, chicken and raspberries. Serve with dressing (suggested white balsamic vinaigrette).
