Progresso® Soup and Sandwich Night - The perfect pairing to warm up the entire family from the inside out, on a long cold day!
It's about that time of year when I start complaining about being cold. I hate being cold. January has brought some cold weather to us here in Massachusetts. In case you don't live around here, by cold, I mean it was 10 degrees the other morning. That is some seriously cold weather.
After I picked up Nora (my 4 year old) from school on Tuesday, we stopped off at Walmart to grab a few things I've been meaning to pick up. As I was heading to the dental care aisle, I noticed an end cap with a display of Progresso® Light Soups. As soon as I saw it, I knew it was going to be the perfect thing to warm us up!
I grabbed a few cans of the Italian Style Meatball Soup and also some of the Chicken Corn Chowder. Not only did I have a coupon for $1.00 off four cans but Progresso® Soups have Box Tops on their labels! If you have school aged kids you know that Box Tops = money for your school.
On the way from the car to my house, Nora just had to stop and play with the dusting of snow on the ground. I do mean a dusting. She's just praying for a massive snow fall everyday. She can't wait to get out there to build a snowman, go sledding and have my husband build her a snow fort again. I couldn't bring myself to rush her, she was having so much fun, even though I was freezing! When she finally gave up on the snow, we headed in and I started right in on dinner.
I obviously wanted grilled cheese to go with my soup. Is there a better combo than that on a cold day? It's the kind of thing that just warms the soul.
Since it's that time of year when we all try to eat a bit lighter, I didn't want a super indulgent grilled cheese. But I did want simple and delicious; no need to sacrifice flavor.
Since I was preparing the Italian Style Meatball Soup, I kept on the Italian theme and grabbed part skim Mozzarella and a thin sliced Provolone. I also opted to use extra virgin olive oil in lieu of butter. The bread I used was a multigrain panini style bread. And, I always feel better about a grilled cheese if it's loaded with fresh spinach.
A toasted sandwich just begs to be dipped in a warm soup, doesn't it? Just look at that cheese!

Progresso® Soup and Sandwich Night
Ingredients
- 4 Slices Multrigrain Panini Style Bread
- Olive oil
- 4 Slices Mozzarella Cheese part skim
- 4 Slices Provolone Cheese thin sliced
- 1 C Baby Spinach packed
- 1 Can Progresso® Light Italian Style Meatball Soup prepared according to can instructions.
Instructions
- Drizzle olive oil on one side of each slice of bread. Lay two bread slices oil side down. Place one slice each of provolone and mozzarella on both pieces of bread. Top the cheese with half the spinach for each sandwich and place remaining cheese on top of that. Place the remaining slices of bread on top to form a sandwich, oil side out.
- Heat a non stick griddle, grill pan or fry pan to medium heat. Place sandwiches on hot pan. Cook 2-4 minutes until golden brown. Flip sandwiches over and cook until browned and cheese melted.
- Slice each sandwich in half and serve along side soup.

I love the spinach/cheese combo. I wouldn't have done that as a hot sandwich with soup, but it sounds like such a better option than just a standard grilled cheese.
