    Grilled Skirt Steak Fajitas (No Seasoning Packet Needed)

    These Grilled Skirt Steak Fajitas cook up quickly making them perfect for weeknight meals. Move over Taco Tuesday, we're here for Fajita Friday!

    No seasoning packet needed, just a quick marinade with some pantry seasonings.

    Sure the excitement of a smoking hot cast iron skillet with a cute little handle, being served to you in a restaurant is great but the flavor isn't always it. It depends on the restaurant.

    It might seem difficult to prepare grilled fajitas but I'm here to tell you how easy it actually is.

    Whether you have a gas grill or a Blackstone flat top, these grilled fajitas are easy peasy!

    How to prepare grilled fajitasย 

    To start, I mix together my seasonings / marinade ingredients and slater it all over my skirt steak.ย

    Let the steak hang out in the marinade for about 20 to 30 minutes. You can use this time to prep everything else.

    While the steak is marinating, slice the onions and peppers and get all your toppings together.

    If you want to try your hand at a homemade salsa on the side, you can try this Blender Salsa Recipe.

    Toss everything on to a preheated grill. If you are using a gas grill, you might want to use either a grilling mat or a vegetable basket so you don't lose the veggies through the grates.

    Skirt steak will grill up in about three to four minutes per side.

    ย Allow the steak to rest a few minutes before slicing.

    While the steak is resting is when I warm the tortillas on the grill too.

    When you do slice the skirt steak, you'll wan to slice it at a diagonal and against the grain. This will result in an easier chew.

    To serve my steak fajitas, I like a rustic look. I place the sliced skirt steak on a cutting board or large platter and place all the toppings around it. Everyone can custom build their fajitas.

    As a side dish, a lot of the time I will make my Instant Pot Refried Beans.

    Ingredients
      

    • 1 ยฝ pounds skirt steak or flank steak
    • 3 cloves garlic sliced
    • 2 tablespoons orange juice
    • 1 ยฝ teaspoon chili powder
    • 1 teaspoon smoked paprika
    • 1 teaspoon cumin
    • ยฝ teaspoon dry oregano
    • ยฝ teaspoon dry coriander
    • 2 tablespoons avocado oil or other neutral flavored oil
    • 1 ยฝ teaspoon salt divided
    • ยผ teaspoon black pepper
    • 1 yellow or orange bell pepper sliced
    • 1 vidalia onion sliced
    • Fajita sized tortillas

    Optional Toppings

    • 1 Avocado sliced
    • Shredded cheddar cheese blend
    • Sour cream
    • Salsa
    • Guacamole

    Instructions
     

    • In a bowl combine garlic, orange juice, chili powder, paprika, cumin, oregano, coriander, 1 teaspoon salt and oil. Rub mixture all over steak and set in a bowl for 30 minutes.
    • While steak is marinating, season onions and peppers with salt and pepper and preheat grill to medium/high heat.
    • Place marinated steak on grill and place onions and peppers on grill in either a grill basket or grill mat (to avoid onions and peppers falling into grill grates). Cook the steak just 4 minutes on one side and then flip over and cook about 4 minutes on the other side. Remove from grill and allow to rest while onions and peppers continue to cook, about 5 more minutes. Place fajitas on grill just for one minute to warm.
    • After steak has rested 5 to 10 minutes, slice in thin slices against the grain on a diagonal.
    • Arrange steak on a platter with onions, peppers and other toppings and assemble in tortillas.
