Asian Style Turkey Noodles - Ground turkey lightens up this typically heavy Asian beef dish.
You guys! I know. The title. It's awful. I swear I spent a good amount of time trying to name this dish. I was stuck. I don't know enough about Asian cuisine to be comfortable with sub categories. I mean, I am a total expert on eating Asian food. I just don't know exactly what makes something a "Hunan" dish or a "Szechuan" dish, so I decided to stick with the less than appealing name of Asian Style Turkey Noodles. Sorry.
What I am not sorry about is how this dish tastes. Not one bit.
We order takeout from a local Chinese restaurant all the time. It's my ultimate favorite take out. It's just not so healthy all the time.
Now, don't get me wrong. I am certainly not claiming this dish to be healthy but since I used lean ground turkey instead of beef, I figure that cuts a lot of the fat and calories out. So I can call it lighter. Yes I can. It's my dish and if I say I can, then I can (said in the whiniest voice ever).
I needed something to serve with these noodles so I tried a quick, shortcut cream cheese wonton. If you want to try something like that, all I did was scoop a little chive and onion cream cheese into the center of a wonton, fold it up and plop it in some canola oil for a few minutes. Nothing fancy but tasty, for sure.

Asian Style Turkey Noodles
Ingredients
- 1 lb lean ground turkey
- 1 T olive oil
- 1 sweet onion diced
- 2 stalks celery diced
- 1 teaspoon ginger paste
- 2 cloves garlic minced
- ⅛ teaspoon crushed red pepper flakes
- 1 C beef broth
- 2 T cornstarch
- ¼ C hoisin sauce
- 2 T soy sauce
- 9 oz refrigerated Chinese noodles
- 2 green onions chopped
Instructions
- Heat 1 T oil in a skillet over medium high heat. Add turkey and cook until no longer pink. Remove turkey from pan and set aside.
- Prepare noodles according to package.
- Return pan to medium/high heat. If pan seems dry, add another T oil. Add onion and celery, cook just until beginning to soften, about 4 minutes. Add in the garlic, ginger paste, red pepper and cook another minute.
- In a bowl whisk together the broth and cornstarch and add it to pan.
- Stir in hoisin and soy sauce, cook 2-3 minutes, add ground turkey back to mixture.
- Add noodles to mixture and toss well with tongs to incorporate.
- Garnish with green onions before serving.
