    Slow Cooker BBQ Chicken Chopped Salad - Easily prepared chicken in a slow cooker is the star of this chopped salad that is served in a way for everyone to customize their own salad experience.

     On these hot summer nights, I would love nothing more than a light refreshing salad for dinner.  However, I dread to see the disappointed look on Mr. Carnivore's (the husband) face if that is all I serve.  So after seeing this recipe posted on http://www.sixsistersstuff.com/  I knew this was the perfect compromise.  I have to say it went over even better than I had thought it would.  I think this salad will make it into the summer rotation every other week, if not every week.  I think I could mix up the flavoring on the chicken for some versatility and as easy as that we have a new staple!

    Of course you can mix up the ingredients to what you and your family prefer, these are just suggestions.  To make things even easier the chicken gets cooked in a crock pot OR if you really are feeling like not cooking you could use some  precooked chicken.

    Because this is a salad I generally serve in the summer months, I've added mango for a little summer sweetness.

    Slow Cooker BBQ Chicken Chopped Salad

    Ingredients
      

    • 2-3 boneless chicken breasts
    • 1 C BBQ sauce any variety you prefer
    • 1 teaspoon garlic powder
    • 9 oz lettuce chopped (any variety)
    • 1 avocado diced
    • 1 mango diced
    • 2 eggs hard boiled, chopped
    • 1 cucumber diced
    • 2 carrots diced
    • Optional: croutons

    Instructions
     

    • Place chicken in slow cooker. Pour BBQ sauce over chicken and season with garlic powder. Set slow cooker to high for 2 hours or low for 4 hours.
    • When chicken is cooked, remove from cooker and chop.
    • Place chopped lettuce in a large serving bowl.
    • Arrange all other ingredients in rows on a large platter.
    • Enjoy!

      I love seeing mango as the not-so-secret ingridient. Mangoes make everything taste so much better. I have to try mango in a slow cooker recipe next.
