Boozy Brie Appetizer - A nutty liqueur is the secret ingredient in this kicked up classic cheese appetizer.
A funny thing happened the other day. I posted a quick, spur of the moment picture on Instagram and Facebook of two loaves of bread I baked. I thought it was cute because one of the loaves I baked was extra small because I was giving it to my brother. In my head I thought perhaps a few people would check off "like" and that would be the end of it.
Nope.
No, sir.
Some of my followers have a keen eye.
And a lot of you apparently like cheese.
You guys spied my super secret - middle of the day - me eating an awesome boozy brie cheese appetizer - in the background of my pictures! You are super sleuths. I had a few comments and quite a few private messages asking me, no imploring me, to give the recipe.
Yes, I sometimes eat cheese alone during the day. Whatever.
So here it is.

I think any nutty liqueur would work well here but the one I used was a chestnut liqueur called Dream Catcher.
So, warmed brie is a classic, obviously. A go to, in my house on the holidays. While usually I top it with some preserves and/or puff pastry (like my Blueberry Brie Puffs ), I wanted something with a little more texture. With a little more pizazz. With a little more oomph.
To get this party started I toasted up some almonds and then poured in a good helping of liqueur. At that point, I had no other plan. Seriously, I was kind of frantic watching my boozy nuts cook away. I opened my pantry and it was like I was on auto-pilot. In went some honey and brown sugar and a pinch of salt. Then I dipped my finger in to taste it (prematurely, I might add - yes I burned my finger) and it was AWESOME.
I poured that concoction over a wheel of brie and warmed it up in the oven on a baking sheet.
I'm not proud of what happened next. Let's just say when my brother came to pick up his loaf of bread, I sent him with the remaining half of brie. Yes. You've done the math correctly. I ate half of a wheel of brie by myself. Don't judge.

Boozy Brie Appetizer
Ingredients
- 1 Brie Cheese wheel
- ¼ C Almonds roughly chopped
- ⅓ C nut flavored liqueur I used Dream Catcher
- 2 T Honey
- 2 T Brown Sugar
- Pinch of Salt
Instructions
- Preheat oven to 350.
- Place chopped almonds in a pan over medium heat. Cook 2-3 minutes, shaking the pan once or twice. Increase heat to medium/high and carefully pour in liqueur. Cook until reduced by half. About 2-3 minutes. Stir in brown sugar and honey. Reduce heat back to medium. Cook, stirring often, until thickened, about 1-2 more minutes. Stir in salt.
- Place brie on a parchment lined baking sheet. Pour nut mixture over brie. Bake 10 minutes.
- Serve warm with sliced bread or crackers.
