Cheeseburger Pizza Wraps - A family friendly dinner idea combining two kid favorites; cheeseburgers and pizza.
You ever have one of those days when you can't decide between two things for dinner? I do. All the time! Most of the time I just have to bite the bullet and decide but the other night, well, I had a moment of sheer brilliance (if I do say so myself)!
I was in the mood for a cheesy burger but also kind of craving some pizza. I thought about making a pizza with cheeseburger type toppings but having just gotten back from our Disney vacation, I really didn't want to be fussing with dough. I had too much laundry to be done. I'm pretty sure I've told you before about my lack of vent situation in my kitchen, so cooking burgers on the stovetop is out. I could have gone outside to grill them but it was like 30 degrees AND raining.
Once I saw that I had tortillas in the pantry I knew I wanted to combine the flavors into a wrap. I don't know why I didn't think of this over the summer when I went on my wrap kick. Remember, I was putting everything into a wrap???
Anyway, these are super easy to put together. You can add whatever pizza "toppings" you like. Since I am a cheese pizza type of girl, I only used a pizza cheese blend but I think that pepperoni would be awesome. Also, if you're looking to lighten things up, use lean ground turkey and low fat cheese.
Just start off by browning the ground beef (or turkey) and then toss in some onions and any other toppings you are using (pepperoni, peppers, etc). Drain the excess grease and then stir some pizza sauce and seasonings into the ground beef mixture and wrap it in a tortilla with the cheeses.
So the cheese situation may be a little bit overkill, but if you're like me, you will agree there is no such thing as too much cheese. So with that being said I place cheddar cheese (what I'd normally put on a burger) on the tortilla, top that cheese with the ground beef mixture and then top that with a pizza cheese blend (mozzarella, provolone, parmesan). Man, I love cheese.
You could totally eat the wrap as is at this point, but why not make it all buttery and toasty? Melt a bit of butter in a saute pan and place the wraps in seam side down. It will only take a few minutes to brown up on each side. This also helps that cheese get all melty and good.
You can also make these ahead of time (store in refrigerator) and bake them to reheat for after school snacks.

You know what is so funny to me. I bookmarked this recipe recently to make for dinner and re-shoot the photos and when I made my ingredient list, I said to myself "why didn't I add chopped pepperoni and I added it to my list!
