    Chicken with Peaches

    Chicken with Peaches - Boneless chicken breasts are seasoned with curry powder and cooked alongside peaches in this quick weeknight meal.

     There is nothing quite like the first bite into a juicy fresh picked peach, right?  Yes.  So sweet. So good.  Mmmmmm.   Well, get over it!  Summer is over and fresh peaches are gone.  Nowhere in sight. Gone.

    Sorry to be so harsh.  I thought it was best to treat this like a band aid moment.  Rip it quick and the sting will be short and all that. 

    Fall is here.  We are closer to winter than we are to summer so let's starting being realistic.  Just because summer is gone and so is the delicious fresh, juicy fruit, we can still get  those yummy peach flavors.

    Okay, so canned fruit isn't as good as fresh.  I'm not saying it is.  I'm not even hinting in that direction.  I'm merely suggesting that we don't wait until the summer to make a delicious dish just because we're too snobby to use canned fruit.  You with me?

    End rant on canned fruit.

    Phew.  Glad that's done.  Now let's move on to the Chicken with Peaches.  I actually adapted this recipe from a recipe for Chicken with Apricots. 

    The chicken is simply seasoned with salt, pepper and curry powder.  That's it.  How easy is that?

    I chose to keep things healthy and serve the Chicken with Peaches over brown rice.  In the amount of time it takes to cook the rice, the entire meal can be made.  A complete meal in under 30 minutes.  Your welcome.

     Oh and when those fresh juicy peaches come back you will definitely want to make my Peach & Zucchini Salad.  Now that is something worth waiting a few seasons for.

    Chicken with Peaches

    Ingredients
      

    • 2 T olive oil
    • 4 boneless chicken breasts
    • 14 oz can peaches halved, drained, reserving ¼ C liquid
    • 1 teaspoon curry powder
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper
    • ½ C chicken broth
    • 2 C brown rice cooked
    • Optional: green onions chopped for garnish

    Instructions
     

    • Heat olive oil in a large skillet over medium/high heat. Season chicken with salt, pepper and curry powder. Add chicken and to brown. Flip chicken over and brown other side. Add peaches to skillet with reserved liquid and chicken broth. Continue to cook until chicken is cooked through and no longer pink and peaches are warm.
    • Serve over brown rice, garnished with green onions.

      This reminds me of something similar I did with end-of-season mangoes, last summer! The curry is a nice touch - love it!
