Coffee Glazed Chocolate Chip Loaf - A wonderful treat for breakfast, snack or even dessert, made with a touch of brewed McCafé Coffee and drizzled with a coffee glaze.
I think by now you guys know that nothing happens in my house until a cup of coffee has been consumed. I get up extra early each day, just so I can have a few minutes alone in a quiet house to have my coffee. I sip a cup of coffee, read the morning headlines (okay fine, not headlines, but I browse through Facebook and gossip sites). Once the kids get up mayhem will ensue, so I savor this quiet time. Lately, during my "me time", I've been brewing McCafé; with 8 flavors I don't have to worry about what I'm in the mood for because it's covered.
My youngest daughter (Nora, age 3 going on 15) has really shown an interest in baking lately. She won't actually eat any of it, she just likes to help out. It's just her and I home while my other kids are at school so this is a good time for us to experiment in the kitchen. The other day while we were browsing in Walmart for some baking ingredients, I detoured down the coffee aisle and picked up a few boxes of McCafé pods (FYI, if you don't have a pod type brewer, McCafé is also available in premium bags).
When we got home and started to unload our bundles, the wheels started turning and I thought "why not add coffee right into my batter?". Brilliant, right? Well, I decided that not only did my Chocolate Chip loaf need coffee in it, but it most definitely needed a glaze and not just any glaze....A COFFEE GLAZE! Can you tell I am a bit proud of myself for this epiphany?
The only concern I had was that the coffee flavor might be overpowered or lost in the recipe against the other ingredients, so I knew I had to use the French Roast. The McCafé French Roast is bold and dark and the flavor most certainly can stand up for itself. I actually prefer the darker French Roast for drinking as well because the flavor doesn't get drowned out by a little creamer.
I have a friend coming over tomorrow for a coffee date and this Coffee Glazed Chocolate Chip Loaf will be the perfect accompaniment to our mugs of McCafé.
Oh, I feel like I have to address the elephant in the room, or the photos to be more specific. My dingy looking coffee mug! Of course I have prettier mugs in the house but no matter how many mugs I get, over 10 years later, this one is always my first choice. It is the first gift my husband gave me for our first Valentine's Day while we were dating. Even though he doesn't remember it clearly, it was very sweet. He bought me a cute coffee mug to keep at his house, so I would have something of mine there and if you know me, well, a coffee mug is the perfect thing for me.

Coffee Glazed Chocolate Chip Loaf
Ingredients
- 2 C flour
- ½ C granulated sugar
- 1 C brown sugar light brown
- 1 teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ C butter softened
- ¼ C Greek yogurt plain or vanilla
- ¼ C brewed black coffee we used McCafé French Roast
- 1 C chocolate chips
Coffee Glaze
- 2 T brewed coffee McCafé French Roast works great
- 1 teaspoon vanilla extract
- 1 ½ C confectioners sugar
Instructions
- Prepare a loaf pan with non stick spray.
- Preheat oven to 350.
- Place all ingredients except chocolate chips in a large bowl. Beat mixture, on low for 30 seconds, then increase to medium and beat until smooth, about 2 minutes. Fold in chocolate chips.
- Pour mixture into prepared loaf pan and bake 1 hour 10 minutes.
- Let loaf cool in pan for about 10 minutes before removing it. Allow to cool completely on a wire rack.
- Once loaf has cooled, drizzle glaze over the top.
Glaze
- Whisk together all ingredients. If needed, add additional confectioners sugar in 1 T increments until you have the correct consistency.
