    Cranberry Glazed Turkey Meatloaf - All the flavors of  Thanksgiving incorporated into an easy weeknight meatloaf

    I know it's not even Halloween yet, but I'm totally craving Thanksgiving dinner.  If you follow me on Facebook then you know I've even been having horrifying dreams about Thanksgiving, where my guests arrive and as I start serving dinner, I realize I've forgotten to roast the bird!  Yep, I've got it bad.  Thanksgiving Fever has set in. 

    I wasn't quite ready to start roasting a whole bird, but I so wanted the flavors of the holiday.  Enter the Cranberry Glazed Turkey Meatloaf. 

    Cranberry Glazed Turkey Meatloaf

    As I was thinking about how I wanted to actually get this meatloaf done, I knew I wanted to incorporate stuffing.  I've tried that meatloaf recipe floating around Pinterest where you sub stuffing instead of breadcrumbs, and I'll be honest, I didn't love it.  So instead of that, I decided to use stuffing as it was intended.  I stuffed it in the center!

    I usually jam my meatloaves full of shredded or shaved veggies.  You can totally still do that with this one, but I was looking to make something totally different than my usual meatloaf.

    Cranberry Glazed Turkey Meatloaf

    As I got my mixture together, oven preheated, and loaf pan ready to go, I remembered I happened to pick up mini loaf pans at The Dollar Store the day before.  Awesome!  My plan for those was originally mini banana breads, but mini meatloaves sounded way better!

    If you can't get your hands on mini loaf pans, go ahead and just plop it in a regular loaf pan.  If you don't have a regular loaf pan, just shape it into a loaf pan on a baking sheet pan.  See I've got you covered.

    So, if you are wanting Thanksgiving flavor without actually cooking a meal that takes hours, give my Cranberry Glazed Turkey Meatloaf a try!

    Cranberry Glazed Turkey Meatloaf

    Ingredients
      

    • 1 lb ground turkey
    • 1 egg
    • 1 T dehydrated onion I use Onion Onion by Tastefully Simple
    • ½ teaspoon salt
    • ¼ teaspoon freshly ground black pepper
    • 1.5 C stuffing prepared (I used Stove Top)
    • ½ C canned cranberry sauce
    • ¼ C chili sauce

    Instructions
     

    • Prepare stuffing as per package directions. Allow to cool. Set aside.
    • Preheat oven to 350.
    • In a large bowl combine turkey, egg, onion, salt and pepper.
    • Divide turkey mixture into 3 equal portions.
    • Place ½ of each portion in the bottom of each mini loaf pan. Place a handful of prepared stuffing on top of the turkey mixture and then cover that with remaining turkey mixture. Press together to seal edges.
    • Place loaf pans on a baking sheet and cook 25 minutes.
    • While meatloaves are cooking, stir together the cranberry sauce and chili sauce.
    • After 25 minutes cover each loaf with cranberry mixture and return to oven and cook an additional 10 minutes.

      What a great idea! I'll have to remember this recipe the next time I make meatloaf. I really like the idea of putting a cranberry glaze on a turkey meatloaf.

      I think the mini loaves are a great idea. Since they wuld cook more quickly I think they would stay more moist.
