    Crock Pot Tortellini Soup
    I am SO over this winter. We had a few days here and there of temperatures that reached into the forties, and I am just dumb enough, to have thought this meant spring was on the way. I started making all sorts of spring vegetable meals, and I was doing some "spring cleaning" around the house. And then.....WHAM - snow again.

    The only thing that gets me through these cold nights is a huge bowl of piping hot soup. I love soup in the winter; it's the only way to warm up from the inside out. It is so much better than a warm blanket. And since it appears that we will be seeing a lot more of this winter business, I am sharing my new favorite Crock Pot Tortellini Soup!

    A while back I posted a great Crock Pot Recipe Round up and the hit of the post, according to my readers/friends, was a tortellini soup. Well, knowing that you all enjoy a good crock pot soup, I decided to give you my version of a Crock Pot Tortellini Soup and it's loaded with yummy veggies to boot!

    My recipe is a tomato based soup and it serves up rather thick. In fact, when I made it the other night, I asked my husband "Are you having more soup, or can I start to clean up?". And he looked at me quizzically and said "that was soup? I thought it was a tomato sauce". I am standing by my title, it's a soup!

    One final comment about this recipe. I know I say this on all my crock pot recipes, it's become my disclaimer: I am not one of those people who swear by a crock pot. Most things, I don't enjoy out of a crock pot, so when I post a crock pot recipe, you can be surer than sure, that it is darn good.

    Ingredients
      

    • 1 lb Italian Sausage browned, drained (Sweet or Hot, or a combo of both which I prefer)
    • 1 sweet onion diced
    • 1 2 garlic cloves minced
    • 3 carrots diced
    • 1 zucchini diced
    • 1 bell pepper green, diced
    • 10 oz tomato sauce
    • 28 oz crushed tomatoes
    • 2 tsp. Italian seasoning
    • 32 oz vegetable broth chicken is fine as well
    • 1 package tortellini family size (I used Buitoni spinach & cheese variety but you may use your favorite variety)

    Instructions
     

    • Line your crock pot with a liner (optional but suggested).
    • Stir together everything except tortellini in crock pot.
    • Cook on low 5-6 hours.
    • Add tortellini and cook 30 minutes more.
