    Crock Pot BBQ Chicken Quesadilla

    Crock Pot BBQ Chicken Quesadilla Have you noticed I've been using my crock pot a lot lately? I admit, I have been a bit of a crock pot snob in the past.  I pin crock pot recipes, I bookmark them, I love the sound of them, but in execution, I have mostly been disappointed, especially with chicken recipes.  I will get to the Crock Pot BBQ Chicken Quesadilla recipe in a minute, first I want to share some information with you.

    Now, I do not consider myself any kind of expert in the crock pot world.  But, I will share with you the few things that I have learned, that have made me a believer, and quite possibly even a fan of the crock pot as of late.  Chances are, you already know this information and I'm just a dummy.   But, if I can help one person, it's worth it.  So, with that being said, if you didn't know this information, please leave me a comment, so I can feel a bit less stupid.  Thanks.  Seriously, comment, I need the ego boost!

    • 1 hour on high is = to 2 hours on low
    • Crock pots can cook differently.  I have come to learn mine cooks very hot, so I always have to shave some time off a recipe.  Get to know your crock pot.
    • Don't lift the cover (who knew?).  Every time you take off the cover, it adds 10-20 minutes of cooking time.
    • Always use a liner.  It makes cleanup ridiculously easy.  Prior to using a liner, I would have to soak mine overnight every time.
    • Fill crock pot at least half full.  If it's not half full, it will not cook the same.
    • Chicken - Most recipes call for cooking 8 hours on low.  I have discovered that it has a much better texture and flavor when I cook 4 hours on low.  Anything beyond 4.5 hours and mine falls apart.  Obviously, make sure it's cooked to the proper temperature, but my guess is that for you 4 hours will be the magic number.

    So that is my big crock pot advice.  Now, back to the reason you are here to begin with - the Crock Pot BBQ Chicken Quesadilla.

    Crock Pot BBQ Chicken Quesadilla

    The BBQ chicken is prepared in the crock pot and then I chose to bake the quesadillas, but if you have a quesadilla maker, they work great.  Also, if you prefer the stove top method, those are great too.  I was just feeling a bit lazy and also I was trying to lighten it up a little bit.

    Last note about the recipe:  I wish I had pineapple on hand.  I think pineapple would have been a great addition.  So go ahead and throw some avocado in there and then report back and tell me how much I missed out.

    Crock Pot BBQ Chicken Quesadilla

    Crock Pot BBQ Chicken Quesadilla

    Ingredients
      

    • 3 boneless chicken breasts
    • 1 + ¼ C BBQ sauce divided (your favorite brand/flavor)
    • ¼ teaspoon garlic salt
    • 3 green onions diced
    • 1 C shredded cheese (cheddar or monterey jack work well
    • 5 slices bacon cooked and crumbled
    • 6 large flour tortillas
    • Cooking spray

    Instructions
     

    • Line your crock pot with a cooking liner (optional but recommended)
    • Place chicken in crock pot. Pour 1 C BBQ sauce over chicken and season with garlic salt.
    • Cook on low 4 hours.
    • Remove chicken from crock pot and shred, using 2 forks. Pour remaining ¼ C BBQ sauce to shredded chicken and stir together.
    • Preheat oven to 450.
    • Spray 1 side of 3 tortillas with cooking spray, olive oil or brush with melted butter. Place shredded chicken mixture on each. Sprinkle bacon, scallions and cheese over the chicken. Place remaining tortillas on top and spray the top side with cooking spray.
    • Place each quesadilla on a rack placed over a baking sheet (the rack will allow air to circulate under the quesadilla preventing the bottom from getting soggy) and cook 10 minutes or until nicely brown and crispy.
    • Slice and serve.

      I have the same issues with my crock pot. One of my crock pots doesn't get that hot so when I cook some stuff like brisket or pulled pork I have to cook it overnight. I generally do this anyway as it comes out beautiful. I can let it soak in the juices all day and turn it back on low to warm it for the family that night. The other crock pot gets very hot so I use it for things like queso. You definitely need to know your crock pot. Good post!

      We make these all the time in our home. They are so easy and quick and make for a filling dinner or lunch.
