    Lemon Ricotta Tortellini

    Lemon Ricotta Tortellini - A quick and easy one pot meal with broccoli and loaded with fresh herbs.

     

    Lemon Ricotta Tortellini

     Tortellini is my thing.  You know, that thing that you buy, just about every week, just because you know you can fall back on it when you decided to ditch your meal plan.  You know the thing I mean now?  We all have a thing, right?  For some it's a frozen pizza and others a rotisserie chicken. Well, mine is tortellini.

    I only buy the tortellini that is refrigerated.  I get a bit snobby about the dry stuff.  It just isn't the same! I highly recommend the stuff in the fridge.

    Lemon Ricotta Tortellini

    If you want to make this a meatless meal, the cheese variety works.  However, if you have a carnivore in the house, you can still get away with this meal by using either chicken or sausage tortellini.  See, everyone wins.

    Okay, so on to the dish.  The entire thing comes together in well under a half hour.  That's a bonus, huh?  Oh, I'm sorry, that's not bonus enough?  How about only using one pan? Does that do it for you?  It does it for me!  I love a one pot meal!  Eat more.  Wash less.  That might be my new tagline.

    I can't totally take credit for this meal.  I use My Recipe Magic   and while I was browsing around I came across a recipe called Fettuccine with Lemon Ricotta and Zucchini.  It sounded good.  It sounded easy.  I had no fettuccine.  I had no zucchini.  I had no carrots.  What?  It was the end of the week, give me a break, I can't have tons of produce all week long.  Anyway, I did have ricotta (I'm a good Italian girl, you can always find ricotta, Parmesan and mozzarella in my fridge).  I did have lemons.  I most certainly did have tortellini so I turned her fettuccine dish into a tortellini dish.

    Lemon Ricotta Tortellini

    Lemon Ricotta Tortellini

    Ingredients
      

    • 24 oz refrigerated tortellini
    • 1 lemon juice and zest
    • 3 C broccoli florets
    • 15 oz ricotta cheese part skim
    • ¼ C chives chopped
    • ½ C parsley freshly chopped
    • ½ teaspoon salt
    • ⅛ teaspoon black pepper freshly cracked

    Instructions
     

    • Bring a large pot of water to a boil over high heat. Add tortellini and cook according to package instructions. During last 5 minutes of cooking, add broccoli florets.
    • While tortellini and broccoli is cooking, stir together ricotta, lemon juice, lemon zest, chives, parsley, salt and pepper.
    • Drain tortellini, reserving ½ C cooking water. Return tortellini and broccoli back to pan. Stir in the ricotta mixture and ¼ C reserved cooking water. Cook over low heat for 2-3 minutes, stirring often. If mixture is too dry, add a little more reserved cooking water until desired consistency is achieved.

      Nice! I'd say this is an amazing fall-back dish. I love the vibrant flavors in here. Hmmm...my fall-back is either... (yes) frozen pizza, omelets, or whatever pasta is chillin' in the pantry.
