    Mezzetta Peppe Naan Pizzas

    Is everyone getting their summer plans in order?  We don't do much traveling throughout the summer because we are totally content hanging out here at home by our pool.  Dare I call it a staycation?  That's the cool term these days for people who hang at home, right?  Okay, well then, we are having a staycation!

    Once the actual summer heat is sets in, we have a pretty tough schedule (not).  Kids wake up, get sun blocked and we head outside to our pool.  We plant our butts out there all day.  The problem is getting the kids back inside for lunch or dinner.  Having some easy meals is necessary!  My little one, luckily, is madly in love with pizza.  I know she can be lured up with pizza.

    Today I'm going to share with you two easy pizza recipes.  I say easy because I'm using Naan breads as my pizza crust so there is no dealing with dough or pre-cooking before toppings.  All you've got to do is get your toppings on and pop either in the oven for 10 minutes or on the grill.  I made mine in the oven but I have definitely done it on the grill before.  Just depends on the day.

    After browsing the Mezzetta website, I totally got inspired to think outside the box.  Instead of traditional tomato based sauce for our pizzas, we used Roasted Red Bell Peppers!  I didn't even have to season it!  Seriously, I drained the liquid, tossed the peppers in my blender and 1 minute later, voila, sauce!

    I definitely wanted to bring the heat a bit on one pizza and keep the other fairly mild.  So on the first one, over the roasted red pepper sauce  I added sliced jalapeño flavored chicken sausage, which I quickly browned in butter (it's precooked so I didn't have to cook it but I like the edges to be brown), ricotta, fresh mozzarella and Mezzetta Tamed Jalapeño Peppers.  The second one, I still stuck with the roasted red pepper sauce, but I simply added fresh mozzarella and Deli Sliced Mild Pepper Rings. 

    I know that the combo of ricotta and jalapeño might sound weird, but just go with it.  Have faith in me would ya?!

    That's it.  Cook 10 minutes. Done.  It's a great idea if you're having guests too.  I know we always have people over at the pool and this way I won't have to leave them to tend to themselves for more than a few minutes. 

    If you wanted to, you could even blend up the Roasted Red Bell Peppers early in the day and have it waiting for you.  I think I might even do that next time.

    Mezzetta Pepper Naan Pizzas

    Ingredients
      

    • 16 oz jar Mezzetta Roasted Red Bell Peppers
    • 2 Naan Bread
    • 4 oz fresh mozzarella cheese sliced
    • ½ C ricotta cheese
    • ¼ C Mezzetta Deli-Sliced Jalapeño Peppers Tamed or Hot
    • ½ C sliced chicken sausage I prefer Jalapeño flavor, but not necessary, cooked
    • ½ C Deli-Sliced Mild Pepper Rings chopped (or you could leave them whole)

    Instructions
     

    • Preheat oven to 400 or grill to medium.
    • Place red peppers in blender and process 1 minutes until no large chunks remain.
    • Spread sauce on both Naan.
    • On first Naan, place 3 equal size dollops of ricotta, add sausage, mozzarella and jalapeño peppers.
    • On the second, add mozzarella cheese and top with mild pepper rings.
    • If cooking in the oven, place pizzas on a wire rack, placed over a baking sheet and bake 10 minutes.
    • If grilling, place directly on the grill, cover and turn heat down to low. Cook just until cheese is melted, about 5 -8 minutes.
    • Slice and serve!

      We mostly stay home during the summer also. No sense in leaving when the weather is nice! Love this naan pizza. Naan pizzas are one of my go-to's in the summer!

      We live on Naan around here. My son loves his "pizza bread," and this looks so good with the feta. I'm not sure my two-year-old will eat the peppers though. I might have to wait a few years on those! 😉
