    One Pot Lemon Chicken and Rice

    Pair this One Pot Lemon Chicken and Rice dinner with a side salad for a complete meal.

    A delicious, family-friendly, one pot meal with the flavorful combination of lemon and thyme! Easy to make and easy to clean up!

    This chicken and rice cooks up in less than an hour making a great weeknight dinner option!

    I absolutely love a one pot chicken meal. Since I can see how many people visit each of my recipes, I can see that you all love easy one pot meals too.

    Some of the more popular one pot skillet recipes are my Taco Rice Skillet, One Pot Tortellini and Ground Beef and One Pot Buffalo Chicken Rice.

    Most of my one pot meals are also 30 minute meals. This one however, does require a little marination time. Trust me though, this recipe is still easy to make and doesn't take too long.

    If you are more of a crock pot kind of person, you can try this recipe for Crock-pot Lemon Chicken and Rice.

    This chicken and rice skillet has ingredients that are typically in my house anyway.

    I used boneless chicken thighs in this recipe but if you are more of a breast person instead of a thigh person, feel free to use breasts.

    One Pot Lemon Chicken and Rice

    Boneless chicken thighs are quickly marinated and then cooked together in one pan with long grain rice.

    Ingredients
      

    • 1 Tablespoon Olive Oil
    • 6 Boneless Chicken Thighs
    • Zest of 1 Lemon
    • ÂĽ Cup Lemon Juice freshly squeezed
    • 1 Teaspoon Thyme dried
    • 4 Cloves Garlic minced
    • ÂĽ Teaspoon salt
    • â…› Teaspoon black pepper
    • 1 Yellow Onion Sliced thinly
    • 1 Cup Long Grain Rice
    • 2 ½ Cup Vegetable Broth or chicken broth

    Instructions
     

    • Combine lemon juice, zest, garlic, salt, pepper & thyme in a resealable plastic bag or container. Add chicken and massage to coat chicken. Place in refrigerator 30 minutes to marinate.
    • Heat oil in a large, non stick skillet over medium-high heat. Add chicken (reserving marinade) and brown on both sides (about 4-5 min per side). Remove chicken from pan and set aside.
    • Add onions to pan. Cook 2 to 3 minutes. Stir in rice, remaining marinade and broth. Stir well. Bring to a boil.
    • Return chicken back to pan, atop the rice. Cover and reduce heat to a simmer. Simmer 20 to 25 minutes until rice is tender and chicken is cooked through. Remove cover, if liquid remains, continue to simmer, uncovered for about five more minutes.
    • If desired, garnish w/ sliced lemons, parsley and or additional lemon zest.
