    One Pot Lemon Chicken and Potatoes  -  Crispy chicken and perfectly roasted potatoes, all prepared in one pan for an effortless weeknight meal.

    Let me start off today by saying if you don't own a large non-stick skillet that can go right from your stovetop into your oven, you are missing out my friends.   

    About a year ago, I finally upgraded and got a much bigger skillet than I had previously had.  At first I thought it was too big, but it really has been a life saver.  I can usually brown 5-6 pieces of chicken at a time in this big boy.  No over crowding and no cooking in batches.  Just perfectly browned chicken.  Plus, it's non stick so the clean up is pretty effortless. 

     

     

    Okay, now that I've ranted about my super duper pan situation, here is what I did with it this week.  I took some chicken thighs and browned them in said super duper pan.  Then I tossed in some fingerling potatoes, garlic and lemon slices.  I took the entire pan and threw it in the oven.  Okay, don't actually throw anything in the oven.  I carefully placed it in the oven.  A half hour later, a magical thing had happened...

    Ummmmm..... dinner was ready and it was awesome!  Easy peasy lemon squeezy.  Get it, lemon!  Okay, sorry, I couldn't help myself.  I'm just so giddy about how easy and delicious this was.  Plus, bone in chicken thighs are crazy cheap.  I think I paid like $2.50 for 6 thighs.  So, how can I not be psyched?

    One Pot Lemon Chicken and Potatoes

    Ingredients
      

    • 2 T olive oil
    • 6 chicken thighs - bone in & skin on
    • salt and pepper
    • 24 oz fingerling potatoes
    • 4 garlic cloves roughly chopped
    • 1 lemon sliced

    Instructions
     

    • Preheat oven to 425.
    • Season chicken thighs liberally with salt and pepper.
    • Heat oil in a large, oven-proof, skillet over high heat. Once oil is hot, add chicken, skin side down. Cook until chicken skin is brown and crispy, about 5 minutes. Remove chicken from pan and place on a plate.
    • Place potatoes in pan and stir to coat with remaining oil. Nestle chicken back into skillet with potatoes. Toss garlic into the skillet. Place lemon slices around the top of chicken as well.
    • Place the skillet in oven and bake 30 minutes.
    • Drizzle the lemon garlic pan drippings over chicken and potatoes before serving.

      I love my giant skillet, it's a must for every kitchen. I also love one-pot meals, love that it limits the cleanup.

      It's so convenient that you can make the chicken and potatoes in the same pot. I don't have a lot of time to cook during the week so this would be ideal.
