    Oven Baked Tacos (ground beef with green chile)

    These Baked Tacos are the perfect meal to feed to a crowd, but also perfect for your busy weeknight meals too!

    Simply cook the ground beef together with the onions, chiles and taco seasonings, stuff inside a tortilla with cheese and bake until crispy and melty! Yum!

    This recipe is so easy and delicious and totally customizable, it is no wonder baked tacos are going viral on TikTok!

    Baked Tacos are not a new concept but they sure are having a moment. It's no wonder, they are easy to assemble and if you have picky eaters you can keep them simple.

    Top these tacos with any toppings you'd typically use for your taco night; sour cream, guacamole, salsa, etc.

    Ingredients

    One of the best things about baked tacos is you probably have most of the ingredients in your pantry or fridge right now!

    • Beef - lean ground beef (feel free to sub turkey)
    • Onions - white or yellow
    • Tortillas - corn crisp up best but I've also used flour in a pinch and they're fine, use what you prefer
    • Chiles - canned green chiles, drained
    • Cheese - any cheddar blend works great, I prefer one with a monterey jack because it melts to great
    • Taco Seasoning - this recipe calls for a packet but making a homemade taco seasoning is super simple too and always a good idea.

    The recipe is pretty standard which is how my kids like it but I prefer to stir some extras into my taco meat before assembling. Some examples are:

    • Black beans - canned, rinsed and drained
    • Corn - canned and drained
    • Mushrooms - sometimes I finely chop mushrooms and saute them right into the meat - the kids don't even notice
    • Zucchini - small dice, sauteed
    • Sweet Potato - small dice, cooked in air fryer (this is a good air fryer sweet potato cube recipe)
    • Lentils - prepared
    • Cream cheese - for a creamier filling

    Tip: If you use a leaner beef you likely won't have to drain any fat from the pan as you would with a higher fat content beef. I typically am able to skip draining the fat from anything over 90%. This is all personal preference.

    Instructions

    Full step by step instructions are located in the printable recipe card at the bottom of this page. This is just a quick overview on how to make the baked tacos.

    1. Start by sautéing the onions in a little oil.

    2. Add the ground beef. Breaking it up as it cooks.

    3. Once beef is no longer pink add the green chiles, taco seasoning and water. Simmer until well combined and thickened.

    4. Microwave tortillas to make them pliable. Assemble by placing some ground beef mixture on one half of tortilla, top with cheese (and any additional mix-ins you'd like) and fold closed. Continue with remaining tortillas and meat.

    5. Bake for about 15 - 20 minutes until tortillas are crisp and cheese is melted.

    Serve warm with sour cream, guac, chopped cilantro or any desired toppings.

    What to serve with Baked Tacos

    One of my favorite things to serve alongside Baked Tacos, or any tacos for that matter is Elote Corn.

    Some other classic sides would be a simple green salad, buttered rice, cilantro rice or even my Jalapeno Popper Rice.

    Baked Tacos with Ground Beef

    Ingredients
      

    • 1 pound lean ground beef
    • 4 ounce canned green chiles
    • 3 tablespoon neutral oil vegetable or avocado oil
    • ½ cup diced white onion
    • 1 ounce taco seasoning 1 packet or homemade (*NOTE 1)
    • ¼ cup water
    • 10 corn tortillas *NOTE 2
    • 1 cup shredded cheese taco blend, cheddar jack blend or similar
    • 1 lime juice of

    Optional Toppings & Garnishes * See NOTE 3

    Instructions
     

    • Preheat the oven to 375℉ and line a baking sheet with parchment paper. Set aside.
    • Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chopped onion and cook for 2–3 minutes or until softened.

    • Add the ground beef to the pan with the onions and cook, breaking it up with a spoon, until browned and fully cooked (about 5 to 10 min). SEE NOTE 4

    • Stir in the green chiles, taco seasoning and water. Simmer for 2 to 3 minutes, until the mixture thickens. Remove from heat.

    • Wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds to make them pliable. SEE NOTE 5

    • Arrange tortillas flat on the prepared baking sheet. Spoon beef mixture onto one half of each tortilla, sprinkle with shredded cheese, then fold over. Lightly brush the tops of the tacos with the remaining oil.
      1 cup shredded cheese
    • Bake for 15 to 20 minutes, or until the tortillas are crispy and golden and the cheese is melted.
    • Remove from the oven and immediately squeeze fresh lime juice over the tacos and serve with preferred garnishes and toppings.

    Notes

    Note 1: The recipe calls for a packet of taco seasoning because that is a common ingredient in most households. However, if desired, make a homemade taco seasoning instead.
    Note 2: The recipe calls for corn tortillas. Corn tortillas tend to get a little crispier than flour tortillas. You can easily substitute flour tortillas for corn if you prefer but the texture is different between the two.
    Note 3: Toppings and garnishes vary so much between people so I didn't include them in the recipe itself. Some great ideas though are: 
    • Guacamole
    • Salsa / Pico de Gallo
    • Chopped cilantro
    • Shredded Lettuce
    • Chopped Green Onion
    Note 4: Because the recipe calls for LEAN ground beef I didn't include the instruction to drain fat from the pan. However, if there is leftover grease/fat after the beef is cooked, this is when you'd drain the fat. I have found that a good method for me is to push the beef to one side of the skillet and using tongs wipe up the excess grease with paper towels.
    Note 5: Microwaving is the quickest way to soften the tortillas to make them easier to work with. If you do not have a microwave, you can heat each tortilla in a dry skillet over medium heat for about 15 to 30 seconds per side.
    Note 6: If you would like to add things like black beans, corn or other pre-cooked veggies, you can either add them when stirring in the taco seasoning and chilies or you can add them when assembling the taco itself. I prefer to stir into the meat so everything is evenly distributed.

      We have a weekly pizza night but I've never thought to do a taco night. I don't know why because I LOVE tacos. These look so yummy...and much simpler than the non-baking way of making them 🙂
