Thai Chicken Soup - A nice light chicken soup created with Thai flavors and ready in about a half hour!
I've been wanting to make a soup like this for a while now. The idea has been kicking around in my head but I just hadn't gotten around to it. Enter my brother in law.
My brother in law works in the food industry. I'm not exactly sure of the details but they manufacture foods that are shipped out to restaurants and things like that. Think frozen ravioli. In the building he works out of, they also package up fresh foods for a meal planning company. You know those fancy delivery box companies that mail you a recipe and all the fresh ingredients you need to make said recipe.
Well, every now and then they have an overabundance of fresh produce. Last month, he sent me over a huge box of veggies. I had just gotten back from food shopping (of course!) and didn't need any of it, so I packed my kids into the car and we were able to make a nice donation to my local food pantry. It was actually a good conversation starter for the kids too. I would like them to appreciate what they have and enjoy helping others who need it.
Anyway, last week my brother in law calls to tell me he's sending me over carrots and cilantro. As soon as I heard cilantro, I knew it was finally time to get a recipe together for a Thai Chicken Soup!
I searched the web but most of the recipes contained coconut milk and well, I forgot to pick some up. I finally found two recipes that seemed more like what I was in the mood for so I picked my favorite parts from each of them and made what turned out to be a kick ass Thai Chicken Soup (original recipes are here & here).

Thai Chicken Soup
Ingredients
- 1 T Olive Oil
- 1 T Sesame Oil
- 1 Onion diced
- 2 Celery Ribs diced
- 3 Garlic Cloves minced
- 1 lb Boneless Chicken cut into bite sized pieces
- 1 T Lemongrass Paste
- 1 T Chili Paste more or less to taste
- 1 T Ginger freshly diced
- 2 T Fish Sauce
- 6 C Vegetable broth or chicken
- 8 oz Asian Egg Noodles or any similar noodle
- 2 C Cole Slaw Mix Cabbage & Carrot, shredded
- ¼ C Cilantro freshly chopped
- ½ Lime juice of
- 3 Green Onions sliced
Instructions
- Heat oils in large pot over medium/high heat. Season chicken with salt and add to preheated pot. Cook chicken 3-5 minutes, stirring often just until no longer pink on the outside (it will finish cooking in the soup).
- Add onion, celery, garlic, ginger, lemongrass, chili paste and fish sauce to the pot. Cook 3-4 minutes, stirring occasionally.
- Pour broth into pot. Bring to a boil. Add noodles. Return to a boil and then simmer 4-5 minutes.
- Stir cabbage mixture into soup followed by the cilantro and green onions. Cook 5 minutes more until noodles are tender.
- Remove from heat, stir in juice of half a lime.
- Garnish options: lime wedge, additional green onions, peanuts, cashews, additional cilantro.
