Winter Vegetable Grilled Chicken Salad - Roasted winter vegetables and a quick and easy homemade lemon-garlic dressing are the stars of this hearty entrée salad.
Can you believe that it is mid January and I am just getting around to posting a salad?
I know everyone was running around on Jan 1, making their resolutions to eat cardboard salads every day and all that nonsense. I did not make any such declaration. Why? Because it never works like that. You can't expect to completely change your life in a hugely drastic way and stick with it.
Don't get me wrong, I want to be a better me, physically (and mentally) too but I am starting off the New Year making small changes. By making small changes, I am more likely to stick with them. It just makes sense.
One change I am making is to cut back on sugar. I have rheumatoid arthritis so I really shouldn't be consuming all that sugar anyway, so this is a change I know is important. I don't just mean I'm cutting out sweets; I mean, I need to replace sugar in my savory recipes too.
Okay, so why am I choosing to use Truvia Spoonable in this recipe? Well, for one, it's easy to find. I was able to pick it up right at my local Walmart. I'm not a fan of choosing an ingredient I can only find at a fancy health store. No thank you. It also is a zero-calorie option; come on, who doesn't want that? Plus, it's super versatile, easy to use and let's be honest, the biggest reason is it just tastes darn good!
Okay, enough about me, let's get back to the non-cardboard salad recipe, shall we? By the way, it's not that I'm not a fan of salad, I'm just not a fan of bland salads. I prefer to make sure there is flavor in every layer of the salad. That's why I created an amazingly easy dressing and used it as the marinade for the chicken as well as for dressing the entire salad.
The chicken only needs to marinate about an hour. While it's marinating you can roast up your veggies. I prefer to grill the chicken. I know it's January and there is snow on the ground some places (like my backyard!) , which is why I recommend a grill pan. Although, I know there are some die hard grillers around, even the winter, so either way. Once the chicken is grilled, just toss it together with the roasted veggies, bagged greens, sunflower seeds and drizzle a little more dressing over the top!
I usually like to throw a little crumbled goat cheese on top of my salads but I was out. If it's your thing, by all means add it right on top. It's good either way, cheese or no cheese.

Winter Vegetable Grilled Chicken Salad
Ingredients
For The Dressing
- 3 Garlic Cloves minced
- â…“ C Lemon Juice freshly squeezed
- Zest of 1 Lemon
- ½ teaspoon Thyme dried
- ½ teaspoon Truvia Spoonable
- ÂĽ teaspoon Salt Kosher
- â…› teaspoon Black Pepper freshly cracked
- Âľ C Olive Oil Extra Virgin
For The Salad
- 1 lb Boneless Chicken Tenders
- 1 lb Chopped Winter Vegetables Any combination of Butternut squash, Turnip, Sweet Potato, Rutabaga
- 2 C Broccoli Florets
- 1 Red Onion sliced thickly
- Olive Oil
- Salt & Pepper
- 5 oz Salad Greens baby greens, arugula, spinach combo preferred
- ÂĽ C Sunflower Seed Kernels Dry Roasted
Instructions
- Place garlic, lemon juice, zest, thyme, Truvia Spoonable, Salt and Pepper in a bowl and whisk together. Drizzle in the olive oil while whisking. Whisk 1 minute more.
- Place boneless chicken tenders in a re-sealable plastic bag. Pour ½ C dressing into bag and massage to coat all chicken. Seal bag and place in refrigerator for 1 hour.
- Meanwhile, preheat oven to 450.
- Place winter vegetables, broccoli and red onion on a non stick baking sheet. Drizzle with olive oil and season with salt and pepper and toss around a bit.
- Roast in oven 20 minutes until vegetables begin to caramelize.
- Place chicken on a preheated grill pan or outdoor grill. Cook chicken, turning a few times until chicken is cooked through, about 10 minutes.
- Place greens on serving platter (or bowl). Add roasted veggies to greens. Chop the grilled chicken into bite sized pieces and place on greens. Sprinkle sunflower seeds over salad. Drizzle with additional dressing.
- Enjoy!
