If you have an oven-safe skillet, you can alternatively finish in the oven and still have a one pot recipe.
Okay, it's September, I'm officially craving fall foods.

While I haven't had the chance to make any of these favorites yet this season, I did pick up some bone-in chicken thighs the other day. My husband and kids aren't huge fans of bone-in chicken but when I get the hankering for a roasted chicken, you know, without actually roasting a whole chicken, they are my go to.
I usually opt for chicken thighs instead of breasts just because they are nearly impossible to dry out. I really have to be in the mood for chicken to go breast, but I'll always have a thigh.
I grabbed some herbs out of my garden and the leftover white wine in my fridge and made dinner!
The wine was for the chicken, not for me. Let's just clear that up.
If you don't cook with wine because of the alcohol, you could either use a cooking wine that doesn't contain alcohol or just use chicken broth in it's place.
If you wanted you could throw some diced up potatoes right in the pan with the carrots but I prefer to serve these chicken thighs over a big glob of mashed potatoes.
If you opt to make these Fresh Herb Chicken Thighs, do me a favor. Don't rush it like I did. I was in such a rush, I flipped my chicken before it was the perfect brown that it should be. Mine are close but not quite. Or should I say, do yourself a favor.

Fresh Herb Chicken Thighs
Ingredients
- 1 Tablespoon olive oil
- 4 chicken thighs bone-in and skin on
- 3 cloves garlic chopped roughly
- 4 carrots cut into planks / thick sticks
- 3-4 sprigs fresh rosemary
- 3-4 sprigs fresh thyme
- â…” C white wine
- 1 Cup vegetable broth or chicken
- Salt and pepper
- Optional: 1-2 T butter
Instructions
- Season skin side of chicken liberally with salt and pepper.
- Heat oil in a large skillet, over high heat. Place chicken in hot pan, skin side down. Sear the chicken. When skin is nice and browned, turn chicken over. Leave chicken in pan, over heat for about 4 more minutes. Remove chicken from pan and place on a plate. Set aside.
- Knock heat down to medium/high and add carrots, garlic and herbs. Cook, stirring often for about 2-3 minutes, be careful not to let the garlic scorch.
- Pour wine into pan and scrape up any bites from the chicken left on the bottom of pan. Allow wine to reduce by half.
- Pour broth into pan. Bring up to a boil, add chicken back to pan. Cover and reduce heat to a simmer. Continue to simmer for about 15-20 minutes until chicken is cooked thru. Be sure to periodically remove cover and baste chicken in cooking liquid.
- Optional: During last few minutes of cooking, add butter to the pan and spoon sauce with melted butter over chicken.
- When serving, be sure to spoon sauce over chicken and carrots.
- Alternatively - After chicken is returned to the pan you can put the entire pan in the oven at 350 for 15 minutes to finish cooking.
