    Lemon Butter Pork Chop - A quick cooking, vibrant pork dish that is bursting with lemon flavor!

    I made this Lemon Butter Pork Chop the other day because the sun was shining, finally, and for me, the sunshine and lemon go hand in hand.  The calendar has shown spring for several weeks but here in Massachusetts, it certainly hasn’t felt like spring.  We just had snow last week!  You read that right, SNOW!  So I am taking full advantage of this semi-spring like weather and brightening up my cooking.

    A few weeks ago I created a Turkey Cutlet with Lime Butter and this is a little nod to that recipe. I wanted something similar, but not too similar. I knew I wanted to work with pork, and everything else just came together as I was cooking. As a matter of fact, while the pork was browning, my husband walked in and asked “what are you making” and I said back to him “I’m not sure yet”. Don’t you just love when you cook on the fly and it turns out awesome?

    As usual, I am looking to shave time off of my dinner preparing, so I used a boxed couscous, rather than make two sides from scratch. I also wanted to pair this with a vibrant colored vegetable dish, so I chose to make a quick cooking Warm Snap Pea Salad. I’m not usually so pushy with the side dishes, but I have to say, these three items really worked well together and I think in the future when I make the Lemon Butter Pork Chop, I will keep the sides the same as well.

    Ingredients
      

    • ¼ C flour
    • ⅛ t salt
    • ⅛ t black pepper
    • ⅛ t paprika
    • 1 T olive oil
    • 4 pork chops
    • Juice of half a lemon
    • Zest of 1 lemon
    • 2 garlic cloves minced
    • 4 T butter
    • ¼ C parsley freshly chopped

    Instructions
     

    • In a shallow bowl, season flour with salt, pepper and paprika.
    • Lightly coat each pork chop with flour on both sides.
    • In a large skillet, heat oil over medium/high heat.
    • Add pork chops, and brown (about 4-5 min), flip over and do the same. Once chops are browned, remove from pan and set aside.
    • Add garlic, stir and cook 1 minute.
    • Add lemon juice, zest, butter and parsley. Stir, making sure to scrape up all the bits off the bottom of the pan. Cook 1-2 minutes.
    • Add pork chops back to pan. Cook until pork is cooked through, about 3-4 more minutes (time depends on thickness of chops), periodically spooning butter sauce over chops.
    • Garnish with additional parsley if desired.
