    Mango Guacamole

    Mango Guacamole - An easy homemade guacamole with just a hint of sweetness from fresh mango.

    This time of year is always weird when it comes to food and meal planning.  Part of me is ready for the apples, pumpkins, casseroles and such but then BAM, a few hot days hit again and I revert back into summer mode and start craving things like burgers (click here for 24 Awesome Burger Recipes), salads (click here for 52 Summer Salads) and easy Grilled Pizzas. 

    I thought we were done with the pool for the season, but we actually spent a good part of the weekend floating around.  Whenever we have "pool days" we usually skip lunch because we are outside.  I do try to bring something down so we can snack.  My daughter usually wants chips and salsa but I'm trying to get her more on board with guacamole.  She's a bit underweight and her pediatrician recommends healthy fats like those found in avocados.  I figured a better way for it to seem more appealing to her was to add a sweet component.  Since mango is one of her favorite fruits, it just made sense.

     

    Mango Guacamole

     

    For those of you who aren't aware, fresh guacamole is super easy to make.  All you've got to do is mash up some avocado and mix it with some lime juice, onion and cilantro. You can add other things like tomatoes or jalapenos but they aren't necessary.

    For mashing the avocado, I generally just use a fork because I prefer my guacamole on the chunky side but there are several gadgets and tools for slicing and mashing avocados (like this one, this one and this one ) or you can use a potato masher.  As far as the mango, you can chop it into whatever size you prefer.  Like I said, I like things chunky so I left mine rather big, but if you don't love it like that, just chop them up really small.

    This guacamole is great with chips as a dip but you can also serve it on top of grilled chicken for a new twist or over your favorite Mexican dish.

    Ingredients
      

    • 2 avocados mashed
    • ½ C diced red onion
    • ÂĽ C lime juice
    • ÂĽ teaspoon salt
    • 2 jalapeno peppers seeded and chopped
    • ÂĽ C cilantro
    • 1 mango peeled and chopped

    Instructions
     

    • Combine all ingredients in a bowl. Serve with chips or along your favorite Mexican dish.

      It is still quite hot here so I'm definitely still in summer mode, this guacamole with the mango sounds so delicious and refreshing, perfect for a Labor Day BBQ!
