Sweet and Spicy Boneless Chicken Thighs - A simple but flavorful chicken dish that is made with only a handful of ingredients.
Okay, you guys, I know you're not going to believe me when I tell you how good this chicken is because the ingredient list is so short. But have faith in me. Or, if not me, have faith in the sriracha. Yes, always have faith in sriracha.
So here's the deal, I had this recipe in my head for Sweet and Spicy Boneless Chicken Thighs. I knew two things for sure:
1. I was going to use sriracha for the heat.
2. I was going to make homemade BBQ sauce.
A funny thing happened when I set out to actually make this dish......ummm, I realized I don't actually know how to make BBQ sauce. Right.
I'm sure it's easy enough, but I've never done it and I wisely decided at 6:00 PM when chicken is out on the counter, the kids are running around crazy and the husband is at work late, was not the time to try.
You know what I do know how to do? Open a bottle of BBQ sauce. It's kind of the same.
Anyway, because of my shortcomings with homemade BBQ sauce, I've got this ridiculously easy and super flavorful dish of Sweet and Spicy Boneless Chicken Thighs. So, if you look at it that way - you're welcome, for me being an idiot.
Oh, I should mention, quickly, something I do know how to make, which is Homemade 3 Cheese Baked Mac and Cheese and it goes together with this chicken marvelously! Spoiler alert - recipe coming tomorrow!

Sweet and Spicy Boneless Chicken Thighs
Ingredients
- 2 T olive oil
- 6 boneless skinless chicken thighs, trimmed of excess fat
- ¾ C sweet vidalia onion BBQ sauce or your favorite flavor
- 2 T sriracha sauce
- Salt and pepper
Instructions
- Preheat oven to 400.
- Season chicken with salt and pepper.
- Stir together BBQ sauce and sriracha sauce. Set aside.
- Heat oil in a large, oven proof skillet, over medium/high heat. Add chicken to skillet and allow chicken to brown (3-4 minutes) before flipping over and browning the other side (another 3-4 minutes).
- Brush chicken with the BBQ sauce mixture. Flip over and coat the other side with the sauce too. Bake at 400 until chicken is cooked through and sauce has become browned, about 5-10 minutes.
