    Surprise Snickerdoodle Muffins (OvenArt Silicone Bakeware)

    The other day I was lucky enough to receive an OvenArt Silicone Bakeware Muffin/Cupcake Pan for review purposes, delivered straight from Amazon.  It just so happens the day it arrived, it was also raining.  Now, if you follow me regularly on Facebook, you know that rain=baking for me.  I don't know why, I just get the urge to bake as soon as the drops start falling.

    I hadn't hit the grocery store yet, so I wanted to make something simple with what I had on hand.  I definitely wanted to bake a muffin and not a cupcake.  Between Easter and some birthdays, we've had our fill of cake and cupcakes lately.  Because I always have cinnamon, sugar and nutmeg, I knew snickerdoodle was the way to go.  Then, I opened the pantry and saw a bag of chocolate chips, with only about a quarter of the bag left.  I can't for the life of me remember what on earth I would ever bake that didn't require an entire bag of chips, but I knew I wanted them to be part of this muffin.   I got this image in my head of my son biting into this plain old snickerdoodle muffin and striking gold chocolate, but let's get real, gold and chocolate are pretty much interchangeable, right?  So I decided to make the Surprise Snickerdoodle Muffin.  Fun idea, huh?

    Before we get to the Surprise Snickerdoodle Muffin recipe, let me talk about the muffin pan a little.  I tried another brand of silicone bakeware quite a few years ago and it tore after three uses. I am happy to report this one seems much stronger.  However, it is 100% silicone, so of course it's flexible.  It's best to use a baking sheet to transfer in and out of the oven.

    The package stated that there was no need to grease the pan.  I was very skeptical about this.  I have fallen for this promise in the past from other brands and have been left scraping out my goods to the point of no recognition.  I reluctantly scooped my batter in, sans non stick spray and.......my muffins popped right out!  Seriously, I didn't even have to pat it, I just flipped it over and out they fell. Oh, did I mention, when I was done baking, I tossed it in the dishwasher!  Yup, dishwasher safe!

    Cook time seemed to be the same as my other muffin pans.  Which is good, I hate when I have to remember which pans cook faster/slower than others.

    Okay, back to the Surprise Snickerdoodle Muffin - Since I wasn't going for a super chocolate filled dessert, I only used about 5 chocolate chips per muffin.  If you want something ooey gooey and full of chocolate, just increase the amount of chocolate chips you use.

    So the result?  Josh sat at the table to have a mid morning snack and psyched doesn't even begin to explain his excitement when he hit chocolate.  He immediately ate a second one!  The kid who never finishes anything, ate two, in a row, while sitting down, quietly, at the table.  Amazing.  I also was begged to pack one the next day for his school snack.  Now that is a win in my book!

    Surprise Snickerdoodle Muffins (OvenArt Silicone Bakeware)

    Ingredients
      

    For The Muffins

    • 2 C flour all purpose
    • 1 ½ t baking powder
    • ½ t salt
    • ¼ t nutmeg
    • ½ t cinnamon
    • ⅓ C canola oil
    • ½ C sugar white
    • ¼ C brown sugar
    • 1 egg large
    • ¾ C milk
    • ¼ C chocolate chips

    For The Topping

    • 3 T butter melted
    • ⅓ C sugar white
    • 1 T cinnamon

    Instructions
     

    • Preheat oven to 350.
    • Spray muffin pan with non stick spray (NOT NECESSARY IF USING OVENART SILICONE MUFFIN PAN)
    • Add flour, baking powder, salt, nutmeg and cinnamon to a bowl and stir together.
    • In a large bowl, stir together oil, sugar, egg and milk. Stir in flour mixture.
    • Add just enough batter to each muffin well to cover the bottom (about ¼ of the way full). Add 4-5 chocolate chips to the center of each (more if you want extra chocolaty) and then top with more batter (enough to just about fill the well)
    • Cook 15-18 minutes. Turn out on a rack to cool.
    • While muffins are cooling, melt butter and mix cinnamon and sugar in a small bowl.
    • Dip muffin tops in butter and then in the cinnamon/sugar mixture. Place back on rack to continue cooling.
