Egg Free Blondies (with M&M's)Â -Â A delicious blondie alternative for those who can not tolerate egg, or for those days when you just don't have eggs in the house.

It's been a while since I posted any "allergy friendly" recipes. The reason is that Nora is finally able to tolerate soy lecithin (which is in pretty much everything), so my life has become a lot easier. For those of you who aren't familiar with a soy allergy, generally, the majority of people with a soy allergy are able to still tolerate soybean oil and soy lecithin (because the protein isn't present). However, my little Nora, being the unique one that she is, was never able to tolerate this....until now! Â
We are really excited that her food allergies are dwindling. We are currently down to allergies to the following: egg, peanut, tree nut, soy, chick pea and sesame. We still struggle with some baked goods because of the egg allergy, so I thought I would surprise her the other day and make her some Egg Free Blondies (with M&M's).
M&M's are something that were off the list for a long time because they contain....you guessed it, soy lecithin. Since she was able to try them recently, she has become a monster. The first thing she asks for when she wakes up is M&M's. Of course, I don't give in, but I feel so bad for all the lost time, I'd be lying if I didn't say I was tempted.
As an added bonus, I used both chocolate chips and M&M's, but you can choose between the two if you don't want a sugar overload. When I first started to cut through these, they seemed a little greasy on the bottom and I was really bummed thinking the recipe was a failure. However, I cut them and removed them from the baking pan and a while later when I returned to them, they had firmed up and were great.Â
Don't forget, since we're not actually using eggs here, you're not going to get a thick fluffy result. They were a bit thin, but the kids didn't even notice. As a matter of fact I had my blondies outside, arranged nicely on a cutting board, with a glass of milk, ready to shoot the photos and when I stepped away for a minute, the vultures darling kids annihilated them.
There are quite a few egg replacement products on the market. Be careful when choosing if you have other allergies, some of them contain soy. I just recently started using Ener-G
and I'm having great luck with it. You can even purchase it through Amazon

Of course, I prefer a blondie with eggs in them, but if you can't have egg for whatever reason, these Egg Free Blondies (with M&M's) make a great alternative.
Allergy Note: This recipe contains M&M's. M&M's are processed in a facility that also processes peanuts/tree nuts. Please keep this in mind if you are preparing for someone with a nut allergy. M&M's can be omitted or replaced with a nut free alternative chocolate candy.

Awww your kids are so cute!! Egg free baking can be a challenge. I bake vegan every now and then and have had good results with an increased amount of baking soda. I haven't heard of this egg substitute yet but I will look into it! The blondies look very tasty 🙂

I would inhale this at rapid speed. I love egg free desserts. I have mild issues with eggs and don`t mind flatter desserts if they aren`t in there. It makes them more fudgy which I totally dig.

I'm thrilled to find an egg free blondie recipe! But I think it maybe important to note that M&M's certainly are not safe for those with a peanut allergy given that they pose a risk of cross contamination from being processed on the same line as peanut M&M's. With that being said there are lots of other wonderful substitutes you could add that are peanut safe and will add fun and color to the blondies 🙂 Thank you for sharing your recipe.

Hi Joy. I am well aware of the cross contamination, which is why I didn't say they are nut free. My daughter's nut allergy is minor enough that our doctor has been allowing her to eat foods that are "processed in" a facility where nuts are. That being said, I appreciate your comment and I have added an "allergy note" explaining about the cross contamination of M&M's. I appreciate your input and I probably should have done that from the beginning. Thanks so much and I hope you enjoy the blondies!

The blondes were absolutely wonderful! I doubled the recipe used a mix of semi sweet , milk chocolate, white chocolate and butterscotch chips in the recipe 🙂
Sorry to come off as lecturing I was really more making sure others were educated. Having a child with food allergies I've found that education is key to keeping them safe.
My son is anaphylactic to even touch of peanut residue ( he also has egg, tree nut, and shell fish allergies) it's wonderful that your allergist has given the OK to use manufactured in a facility with products. That would be a dream come true for us!

Oh I'm so thrilled you enjoyed them! Not lecturing at all, as a matter of fact, I more said to myself "wow, I really should have mentioned that". I'm sorry to hear his allergy is so severe. My daughter has actually outgrown a few of hers, so there is always hope. She still has her egg allergy but we have outgrown milk. Her peanut and tree nut numbers have gone way down and as of this this, her test to soy was negative. My fingers are crossed for you. I know how hard it is.
