    Gnocchi Corn Chowder

    This Gnocchi Corn Chowder is a soul warming soup for a chilly day.  The addition of gnocchi is a great way to add a new texture to a classic chowder recipe.

    Gnocchi Corn Chowder

    You guys, seriously, the weather turned cold, so quickly here.  I remember a few years ago, we trick or treated in short sleeves.  I want that kind of fall weather back.  About the only good thing that comes from the weather turning cold, is that soup recipes come out and play a little earlier too.

    When I gave you guys my recipe for Roasted Corn Chowder, I told you, my take on corn chowder is that it's a summer recipe, even though it's a hot chowder, remember?  So, I'm being a little hypocritical here, but not really.  I stand by the fact that corn chowder, made with fresh corn, right off the cob, is indeed, a summer recipe.  But, what is one to do, when fresh summer corn isn't available?  Well, I open a can is what I do.  So, because this Gnocchi Corn Chowder, uses canned can, I consider it a fall to winter dish.  See, I told you, not too hypocritical.  There is indeed, a method to my madness (most of the time).

    Okay, so gnocchi?  In chowder?  I just happened to see this recipe for Chicken Corn Chowder on Reddit, which seemed like a perfectly fine recipe, but what really stood out to me was a comment.  Someone left a comment for the author stating "another take on this which also is great is that you use every ingredient except potatoes and add gnocchi".  I thought that statement was brilliant.  Seriously.  Brilliant.

    I didn't use the recipe for the Chicken Corn Chowder that was posted, but felt I had to mention it because that was where this whole gnocchi business started, so thanks to that guy/girl.

     

    Do yourselves a favor and head straight to the grocery store and pick up some gnocchi. 

    Gnocchi Corn Chowder

    Gnocchi Corn Chowder

    Ingredients
      

    • 6 slices bacon diced
    • 3 carrots diced
    • 3 celery stalks diced
    • 1 onion diced
    • ½ teaspoon fresh rosemary
    • 1 teaspoon fresh thyme
    • 6 C vegetable broth
    • 14.5 oz frozen gnocchi
    • 1 C heavy cream
    • 1 15.25 can sweet whole kernel corn, drained
    • 1 14.75 can cream style corn
    • Salt and pepper to taste

    Instructions
     

    • Place the diced bacon in a large pot and cook until bacon is crispy. Remove the bacon with a slotted spoon and set aside. Return pot with bacon rendering back to burner over medium/high heat and add onion, carrot and celery. Cook until vegetables are just starting to soften, about 5 minutes. Add rosemary and thyme.
    • Add broth and to a boil, add gnocchi and simmer about 10 minutes. Add cream and both cans of corn and simmer an additional 10 minutes.
    • Taste and add salt and pepper as desired.
    • Serve in bowls, garnished with bacon.

      I love corn chowder but I love the idea even more when you throw in gnocchi. So delicious looking!

      It's still in the 90's where I live. BUT it's supposed to drop down into the 80's. A downright cold front. Lol. I'm ready for chowder and I love this!

        I have definitely made other chowders with milk and it has worked fine. It just doesn't thicken up as much.
