Roasted Corn and Mango Relish - A versatile, fresh and cool relish that can be enjoyed atop your grilled sausages and burgers or as a salsa style dip with tortilla chips.
You guys must be so sick of me talking about the weather. All winter long all I did was complain about snow. Then more snow. Oh, and some more snow. Now that the sun is out, I can't shut up about the darn sun either! It's great. I couldn't be happier! Speaking of the seasons changing, do you guys associate certain foods with the change of the seasons? I do. I know summer is around the corner as soon as I see that Sunshine Sweet Corn in my grocery store. And guess what, it's in season now!
Corn (on the cob) is one of the very few things that I can count on the entire family to eat, even those pesky little picky ones! Actually, Nora can't get enough and that kid never eats anything!
Last summer (or was it the summer before? I can't keep track), was when I finally got with the program and starting roasting my corn in the oven. It's so easy and I swear it makes the corn even sweeter. I'm not sure if that is factually true or not, but it seems like it does. You don't even have to remove the husk. You simple put your corn (husk and silk intact) right on the grates in your oven and roast it at 350 for about a half hour and ta-da, you've got some great corn. You will be surprised at how easy it is to remove the silks and husks once it's roasted too. You can eat it as is or you can use that roasted corn in recipes, like this one for Roasted Corn and Mango Relish.
In all fairness, I'm not sure why I'm calling it a relish and not a salsa. I put it together as an accent to some Jalapeno Chicken Sausages I was grilling, so I thought "yep, I'm putting this on top of a sausage, it's a relish". Full disclosure though, I had some leftovers of the "relish" and found myself standing at the kitchen island with a bag of tortilla chips scooping up this relish by the chip-ful (yes I made that word up). I wasn't the only one either, the husband had his fair share, so maybe it is a salsa? Do we always have to be super foodies and know what the proper name is? I vote, no. As long as it tastes good, I'm fine calling it whatever I want. You with me?
Since the kids weren't going to be eating the chicken sausages with us, I grilled them some hot dogs and instead of the relish, AKA salsa, I grilled them some Sunshine Sweet Corn to eat on the cob, simply with some butter and they devoured it! I know you can grill the corn with the husks and all that but I never think to soak them ahead of time, so I had the kids "get their husk on" (or off, I should say), then I wrapped the corn in foil with a pat of butter and grilled it. Again, super sweet.
So as the weather is warming up, think of this relish/salsa made with Sunshine Sweet Corn to bring to your BBQ's and potlucks!

Roasted Corn and Mango Relish
Ingredients
- 2 ears Corn on the cob husks still on
- 2 Mangoes peeled and finely diced
- 1 small Red onion finely diced
- 1 Jalapeno seeds removed, finely diced
- Juice of 1 Lime
- 2 T Cilantro freshly chopped
- ¼-1/2 teaspoon salt or to taste
Instructions
- Preheat oven to 350.
- Place corn (still in husks) directly on grates in oven and roast for 30 minutes. Allow to cool before removing silks and husks.
- Carefully, run a sharp knife down the sides of the cob to remove the corn kernels. Place in bowl.
- Add mango, red onion, jalapeno, lime juice, cilantro and salt (start with less salt and add more to taste as needed). Stir to combine. Refrigerate until needed.
- I also enjoyed this straight out of the bowl with tortilla chips.

I used as a relish on top of Jalapeno flavored Chicken Sausage.

My family would LOVE this! Corn and Mangos are top on the list to eat in my family! Grilling corn, as far as I'm concerned is is the only way to cook corn! YUM!
