    Burrata Crostini Appetizer

    Burrata Crostini Appetizer - Sliced and toasted baguette is topped with ultra creamy burrata cheese, sun dried tomatoes, arugula and then finished with a drizzle of reduced balsamic.

    What Is Burrata?

    If you don't know what burrata is here's the deal:

    It looks like a ball of fresh mozzarella.  Well, it looks like it because it is a big ball of fresh mozzarella but it's what is in the middle that is the stuff food dreams are made of.  Seriously, it's ooey and gooey and creamy and dreamy. And it's just about the best thing I've ever put in my mouth!  After doing a little research I found out what is actually in the center is milk curds and cream.  I don't really care what it is, as long as it's getting in my belly!

    Once I was turned on to burrata at a restaurant, I immediately wanted to experiment with this luscious cheese at home. Crostini is a great way to experiment - blank canvas. And bread - who doesn't love bread?

    By the way, is it weird that on any given day you can find at least 3 or 4 different loaves of bread in my pantry?  Please tell me this is the case at other homes too?

    The How To

    Slice up your baguette and drizzle it with olive oil.  If you are feeling ambitious rub a garlic clove on it too.  Toast the bread slices in the oven for a few minutes.  Please, keep an eye on it.  These thin slices of bread can go from perfectly toasty to inedibly burnt in a matter of minutes.

    Once the bread is all toasty spread a little bit of burrata on each one.  I then like to sprinkle a tiny bit of salt and a crack a little pepper of each one.  Drop a few slices of sun dried tomatoes on there and top with arugula.  You could totally eat then just like that. 

    As a matter of fact, my husband and I ate about a dozen of them just like that because I forgot that I had made a balsamic reduction to finish them off.  I'll tell you what, my husband was not angry in the least that I had to make a second batch of these.  Did I mention this all took place around 2 PM on a Tuesday?  Yes, that's right, we devoured an entire loaf of bread and a ball of cheese on a random Tuesday afternoon.  Judge us all you want, it's that good.

    Because it was so good.  A few days later when we were hosting game night I ran out and bought another ball of burrata and made these again.  My guests devoured them.

    Serve these at your next cocktail party, holiday gathering or random Tuesday afternoon.  Whatever the occasion is, trust me, you can't go wrong.

    No Sun Dried Tomatoes?

    I also made these another time but subbed out the sun dried tomato and replaced with dried cranberries and that was pretty awesome too.

    Oh, a quick word about the balsamic reduction.  I make a batch of this almost weekly and keep it in my fridge.  All you do is pour your balsamic vinegar in a small saucepan, cook over medium heat until vinegar is thick and syrup like.

    Ingredients
      

    • 1 Baguette sliced
    • ¼ C Olive Oil
    • 1 Clove Garlic Smashed
    • 1 whole Burrata Cheese Ball (about 8 oz)
    • 4 oz Sun Dried Tomatoes packed in oil, Sliced
    • 2 oz Arugula
    • 1 C Balsamic Vinegar or ¼ C Balsamic Glaze

    Instructions
     

    • Preheat oven to 375 F.
    • Drizzle olive oil over each slice of bread. Rub smashed garlic over each oiled slice of bread. Toast in preheated oven about 10 minutes, until golden brown.
    • While bread is toasting, pour balsamic vinegar in a small saucepan and place over medium/high heat. Once it comes to a boil, reduce to medium/low. Cook until vinegar thickens and becomes more of a syrup texture. Set aside.
    • Spread burrata cheese over each slice of toasted bread. Sprinkle a little salt and pepper if desired over the cheese. Place a few slices of sun dried tomato and two arugula leaves per slice of bread.
    • Drizzle with balsamic reduction.
    • Serve immediately

        Oh my goodness, yes, these are the last thing you want to be looking at while fasting! As soon as your fast is over I suggest you get right to the store to buy the ingredients and treat yourself! 🙂

      I love burrata!!! I have a dairy intolerance so I can't really eat much cheese, but every once in a while I have a little, and burrata is one of my favorites. With sundried tomatoes, arugula, and balsamic, I bet this is fantastic!

      Oh, I have been known to eat my fair share of burrata--and the fair share of everyone else at the table, too. It is so creamy, and so luscious. And so addictive! I love spreading it on crostini like you did here, but also using it in salads and even to top chicken right out of the oven (that creaminess just oozes over the warm meat!). OK, I need to go buy some right now.
