    Spicy Eggplant Soba Noodles

    Spicy Eggplant Soba Noodles - A flavor packed soba noodle dish that comes together easily with a few shortcuts.  Perfect dish for a weeknight meal!  Skip the takeout!

    September is always a month where I start trying to come up with eggplant recipes.  In my area, eggplant is not only in season but it is in abundance.  My family really appreciates when I spend all day in the kitchen cooking up a batch of Eggplant Parmesan but I'll tell you, it's a lot of work!  Don't get me wrong, it's not difficult but it sure is time consuming!

    So in thinking of quicker recipes using eggplant, I was reminded of my 30 minute Eggplant Stir Fry I posted a while back.  I decided to make a play on that eggplant stir fry but I made it even easier by tweaking it a bit and using a shortcut of Fortune Soba Buckwheat Noodles by JSL Foods.  These noodles cook up in just a few minutes and have a great flavor base, allowing me to make my sauce that much easier (and tastier).

    In order to create this Spicy Eggplant Soba Noodles Dish I followed these easy steps:

     

    First, I prepared the Soba Noodles according to package instructions and side aside.

     

    Next, I cooked my eggplant and napa cabbage.

    After the eggplant is soft and the cabbage is wilted, I added garlic and then added the soba noodles with the liquid.  

     

     

    Once the noodles are added, I kept it over the heat and brought it to a boil.  Once it's boiling again, I stirred in a mixture of cornstarch, broth, red pepper paste and ginger paste.  I kept this over medium heat for just a few minutes, tossing the noodles with tongs until the liquid thickened up.

     

    Lastly, I topped with a few chopped green onions before serving.

    Ingredients
      

    • 2 T oil vegetable or canola
    • 1 eggplant cubed
    • 2 C napa cabbage roughly chopped
    • 2 cloves garlic minced
    • 2 packages Fortune Soba Buckwheat Noodles Shoyu Flavor
    • ¼ C vegetable broth
    • 1 T red pepper paste *** See Notes*** or garlic chili paste
    • 1 T ginger paste
    • 2 teaspoon cornstarch
    • 2-3 green onions chopped

    Instructions
     

    • Prepare noodle packages per package instructions.  Set aside.
    • Heat oil in a large skillet over medium/high heat.  Add cabbage and eggplant.  Cook, stirring often, until eggplant is soft and cabbage is wilted.  
    • Stir in garlic and allow to cook, stirring (to avoid burning the garlic) for 30 seconds.
    • Add noodles with liquid into the skillet with eggplant and cabbage.  Toss well and bring to a boil. 
    • Whisk together broth, red pepper paste, ginger paste and cornstarch.   Stir mixture into skillet.  Using tongs, toss the noodles well and continue to cook, tossing until liquid is thickened and coating noodles well.
    • Remove from heat.  Top with chopped green onions and serve.

    Notes

    This recipe is made with what I would consider a mild to medium heat level.  If you prefer a spicier note, increase the amount of red pepper paste.  If you prefer a more mellow spice level, reduce red pepper paste by half.

    COOKING TIP:

    To cube eggplant, cut into slices and then cut each slice into strips and then cube into desired size.
