    Blueberry Puree

    Today we're learning how to make a simple and easy Blueberry Puree!

    I mostly use this blueberry puree as a topper for a hydrating, fiber-filled blueberry smoothie bowl but it has many uses. Read on to see!

    This Blueberry Puree not only works well in smoothie bowls but makes a wonderful topping for ice cream, pound cakes and other desserts as well as stirred into drinks like a margarita.

    If you aren't familiar with smoothie bowls, the way I do it is simple. I just take my kids (or my) favorite, simple smoothie recipe and dump it in a bowl, top it with a puree and finish it off with a granola.

    Sometimes it is a store bought granola and sometimes a homemade one. For this blueberry bowl, this Blueberry Almond Granola would make a great topper.

    I especially like to use a blueberry puree as a topper for smoothies that aren't all that visually appealing. For instance, this is one I've made my kids a million times but because I'm adding blueberries and spinach, the color ends up a little off. Top with a pretty blueberry sauce / puree and it looks beautiful.

    Yes, this blueberry puree can be made ahead. It will store in the refrigerator. I typically will keep it no longer than five days. It never lasts that long anyway because it is too darn delicious to not eat!

    You could also spread this blueberry puree over a slice of my blueberry bread or my double berry muffins!

    Ingredients
      

    Blueberry Puree

    • 1 C Blueberries fresh
    • 1 T Coconut Water
    • 1 T Honey
    • 1 teaspoon Lemon juice fresh

    Blueberry Spinach Smoothie Bowl (optional)

    • ½ C Coconut Water
    • 1 C Greek Yogurt plain or vanilla
    • 1 Banana cut up
    • 1 C Baby Spinach packed
    • ½ C Blueberries fresh
    • ⅓ C Granola of choice

    Instructions
     

    • Place all puree ingredients in blender and process until smooth. Refrigerate puree until ready for use.

    To make optional smoothie bowl

    • Place first 5 smoothie ingredients in blender and process until smooth. Pour into bowls.
    • Spread puree over smoothie. Top the smoothie bowls with the granola. Enjoy

        I guess I should change the wording on that, he joined in the fit club - he did not start it. But cool nonetheless. The more these kids stay active the better, especially given that he is a minecraft video game fanatic!

      Never heard of a smoothie bowl. Love smoothies & will try more variations. How high is the sugar content in the Quaker Oats granola?

        Hi Roslyn, glad you like the look of the smoothie. It looks like the variety I used has 6g sugar for 1/4 C. I'm not sure of the nutritional info for the other flavors they have of the Real Medleys SuperGrains but you can see it all by clicking this link http://cbi.as/2oamd click on the particular flavor and then click nutritional info. I hope that helps.
