Blueberry Smoothie Bowl - This recipe is the perfect start to your day with a boost of nutrition.
Okay, on first glance, you might be thinking "this chick is way behind on the smoothie bowl trend". I know. They've been out for a while and they (are?) were super popular.
I have posted exactly zero smoothie bowls up to this point. I'd like to defend myself.
To put it bluntly, I was waiting for a shortcut. I don't want to have to find all those seeds and see what goes together. I don't want to learn which ones I keep whole and which ones I have to blend? That isn't for me. The problem is, I didn't find anyone who was giving me a shortcut. Luckily, I finally found my own shortcut! Ta-dah!
Instead of buying all those big expensive bags of flax, amaranth, quinoa etc., I just picked up a bag of Quaker® Real Medleys SuperGrains Granola from Walmart.
Seriously. I know. Easy.
The variety I picked up is Blueberry Pecan and it contained oats, flax, wheat, amaranth, sunflower seeds, quinoa, barley, pecans and blueberries. How great is all that stuff? I'll tell you how great. It's yummy bits full of fiber, ALA Omega-3 and whole grains. That's how great!
So what did I do with that bag of yum?
Well, my son, Josh, who is 7, has just started attending an early morning "fit club" at his school. I really want him eating a breakfast before he leaves that will give him a good boost, but I don't really want it to be something junky that he will crash from. He is such a fan of smoothies, I thought this Blueberry Smoothie Bowl would be right up his alley (and mine).
I basically take one of my son's favorite smoothie recipes, pour it into a bowl, top it with a super awesome blueberry puree and then finish it off with the Real Medleys SuperGrains Granola.
My tip to keep things running smoothly in the morning is night-time prep. I make my puree at night and store it in the refrigerator. I also make sure all my smoothie fruits are washed and prepped, so in the morning I can just blend the smoothie and assemble. I know a few people who go so far as to put everything in the blender and store the blender container in the refrigerator. I don't do that, but you can if you want.
The beauty of smoothies and smoothie bowls is the ability to adapt the flavors to your own preference. I used blueberries, banana and spinach in this one and the flavors worked really well but please, make adjustments as you see fit. Have some fun with it!

Blueberry Smoothie Bowl
- ½ C Coconut Water
- 1 C Greek Yogurt plain or vanilla
- 1 Banana cut up
- 1 C Baby Spinach packed
- ½ C Blueberries fresh
- ⅓ C Quaker® Real Medleys SuperGrains Granola Blueberry Pecan
- 1 C Blueberries fresh
- 1 T Honey
- 1 teaspoon Lemon juice fresh
- 1 T Coconut Water
- Place all puree ingredients in blender and process until smooth. Set aside. If preparing puree the day before, refrigerate until using.
- Place first 5 smoothie ingredients in blender and process until smooth. Pour into bowls.
- Spread puree over smoothie.
- Top the smoothie bowls with the Quaker® Real Medleys SuperGrains Granola.
