    Buffalo Chicken Stromboli

    Buffalo Chicken Stromboli -  Pair this easy Stromboli with a salad for an effortless weeknight meal or serve it up as a tasty game day appetizer/snack!

     

    Buffalo Chicken Stromboli

     

    I've been craving buffalo chicken lately.  I don't know if it's all the pizza delivery commercials I've been seeing for football season or what, but I've just been wanting it.  Wanting it bad.  So bad in fact that the other night when we ordered pizza, we got a big order of buffalo chicken tenders. 

    It was a bummer.  They were soggy and just an overall disappointment.  At least the pizza was decent, sort of.

    A few days later and I still couldn't get buffalo chicken out of my head.  I decided to take matters into my own hands and made a mental note to grab some needed ingredients while food shopping for some kind of buffalo chicken dish.

    I had boneless chicken tenders on my grocery list but while I was shopping, it occurred to me that buying a cooked rotisserie chicken would make more sense.  A. It would be quicker than cooking out the chicken.  B.  Rotisserie chickens are way cheaper than buying a pound of boneless chicken tenders or breasts.  I will never understand that.  It doesn't make sense that I pay less for a chicken that I don't have to cook? Whatever, it works for me.

    I also grabbed some refrigerated pizza dough while I was shopping because as I was walking through the store, the thought came to me to make a calzone or Stromboli.

     

    Buffalo Chicken Stromboli

     

    Okay, so what is the difference between a calzone or a Stromboli?

    I have no idea.  I have read two different things.  One difference I read was that a calzone has ricotta but a Stromboli can have any kind of cheese.  The second difference I read was in the way it was folded.  After much contemplation, I decided to call this a Stromboli.  My husband referred to it as a calzone, so honestly, call it whatever the heck you want.  I call it freaking delicious!

    To put this together just stir together the chopped up chicken, hot sauce, mozzarella cheese, carrots and celery.  Place that mixture down the center of your unrolled pizza dough.  Top it with blue cheese crumbles.  Guys, do yourselves a favor and buy double the amount of blue cheese and make yourself a batch of my Bacon Blue Cheese Jalapeno Poppers too.  If you didn't check those out yesterday, check them out today.  Seriously, good food.  Okay, back to the Stromboli.  So once your ingredients are on there, you fold up the small ends first and then the long ends.  Kind of like you would fold a burrito.  Kind of.

    This Stromboli makes a great appetizer for game day or a quick dinner paired with a salad.

    Ingredients
      

    • 2 C Chopped Rotisserie Chicken or any cooked, leftover chicken
    • ¼ C Buffalo Wing Sauce
    • ½ C Diced Carrot
    • ¼ C Diced Celery
    • ½ C Shredded Mozzarella Cheese
    • 4 oz Blue Cheese Crumbles
    • 1 refrigerated tube pizza crust

    Instructions
     

    • Preheat oven to 425.
    • In a bowl stir together chicken, wing sauce, carrot, celery and mozzarella cheese.
    • Unroll dough onto a non stick cookie sheet. Press dough into a long rectangle shape.
    • Place chicken mixture in a line down the center of the dough (lengthwise).
    • Sprinkle blue cheese crumbles over chicken mixture.
    • Fold short ends up dough over the chicken filling. Then, fold long sides up, overlapping. Pinch edges gently to seal.
    • Bake 15-20 minutes until golden brown.
    • Slice and serve.

      What a fun dinner! My husband and I love buffalo stuff as well, so this wouldn't last long at our house! I will have to make it one of these Sundays for game time!

      Holy DELICIOUS! This may be perfect to watch the game with but to be honest, I would pretty much lose interest in whatever was on television with this sitting anywhere near me; very nicely done!!
