Chicken Sausage Sandwich - A satisfying dinner sandwich made quickly with chicken sausage, broccolini and garlic scapes.
Last week we had our oldest daughter's graduation party and like an idiot, I cooked. I don't just mean I did a little cooking, I mean, I cooked EVERYTHING!  I started cooking Saturday at 2 PM and I finally finished at 10PM. When I woke up Sunday morning I had to reheat everything, get all the dips and appetizers prepared and put the finishing touches on the desserts. I got up at 7 AM and finished just in the nick of time when the party began at 1 PM. You can imagine by the time her friends finally left at midnight, I was pooped! I mean, feet throbbing, head pounding tired!
Why did I tell you all that? Because I am about to tell you how lazy I've been in the kitchen this week and I don't want you to judge me for it. Seriously, I haven't felt like cooking a thing. The problem with that is my family still needs to eat and we can only order pizza and Thai so many nights. I hadn't even gone food shopping since the party so the kitchen was pretty empty by my standards.
Lucky for my family, I almost always have chicken sausage in my fridge. I buy it even when I don't have a plan to use it, just to have for a random quick dinner if my schedule changes. The chicken sausage I buy is precooked so really it just needs to be reheated. As far as the rest of the ingredients, I had some broccolini hanging out in my fridge from the previous week that I had planned on using in some pasta. The garlic scapes were left over from my trip to the farmer's market the week before (Scallion and Garlic Scape Fritters).
While my grill was heating up I quickly sautéed the broccolini in some olive oil and after a few minutes I added the garlic scapes. If you don't have access to garlic scapes just chop up some garlic. I sliced the chicken sausage in half before grilling it because I thought it would fit the rolls I had better, so you can decide whether you want to do that or not. While the sausage is warming up I also toasted the rolls. Once everything was done and assembled, I actually placed the entire sandwich back on the grill (cover closed) to get the cheese melted. Done.

Chicken Sausage Sandwich
Ingredients
- 1 T olive oil
- 4 chicken sausages I prefer Sweet Italian variety (pre-cooked)
- 4 garlic scapes halved (or chopped garlic if garlic scapes aren't available)
- 1 bunch broccolini
- 4 sandwich rolls sub rolls or hogie rolls
- 1 C shredded mozzarella cheese
Instructions
- Preheat grill to medium heat.
- Heat 1 T oil in a large skillet and add broccolini. Cooking broccolini 3-4 minutes, turning over occasionally. Add garlic scapes and cook just 3-4 minutes more. Set aside.
- Slice sausages in half lengthwise and place on grill. Cook sausages 6-8 minutes until warmed through, turning halfway through cooking.
- Toast rolls on grill.
- Assemble sandwiches by placing sausage and broccolini mixture in the toasted roll and top with mozzarella cheese.
- If desired, place assembled sandwiches back on grill, covered for 2-3 minutes to melt cheese.

What a crazy coinkdink! Last night for the first time I microwaved steamed broccolini for a Chopped. I have some leftover. Might just have to try your recipe! 🙂

Well how do you like that?! You know to make it a "chopped" I'm thinking you could chop up the chicken sausage, chop up the broccolini!

If you like crunch then yes this is for you. Because I only quickly sautéed the broccolini there is plenty of crunch!
