Easy Easter Peeps Cake - Wow your family with a festive & fun Easter cake. No decorating skills required. I promise.
I am so thankful for this Easy Easter Peeps Cake. I am guilty of spending so much time planning the appetizers and dinner menu for holidays, that I find myself scrambling, last minute to think of some dessert ideas.Â
Desserts are usually the thing I will allow guests to bring, but I still always get nervous and have to make a few of my own desserts. This of course, results in us having a ton of desserts come the actual day, but I am such a control freak, I need to know desserts are taken care of, and leaving things to other people isn't my style.Â
Don't get me wrong, my in laws are totally capable of bringing desserts, and in fact, they bring great desserts. It's not on them, it's totally on me. In the back of my head, regardless of who the person is in charge of bringing something, there's always that nagging "what if". What if there isn't enough? What if it's not good? What if someone doesn't like it? So because I can't just let things go, I stress out the night before an bake. And bake. And bake.
I'm not even kidding you when I tell you this is the easiest cake I have ever decorated. The frosting doesn't even have to be neat. I just slathered on a coat of frosting, not even caring how it looked, because the "grass" covers it completely!
Instructions
Here's all you need to do to create the Peeps Cake (If you are one of those people who have strict time management, do steps 1 & 2 the night before):
1. Bake a cake in a 9x13 pan (any flavor, store bought mix or homemade)
2. Tint your frosting and coconut green with food coloring.
3. Frost cake with tinted frosting (don't worry about being neat). Add peeps around the edges. Sprinkle coconut on the top and add a few jelly beans for decoration.
4. Take a deep breath, you have a beautiful Easter Peeps Cake ready for the holiday dessert table.
That's it. Do you believe how easy that is? I usually spend time molding a bunny, or piping a cute design, but I have to admit this is way easier and I even think way cuter!

Easy Easter Peeps Cake
Ingredients
- Cake mix + ingredients required on box any flavor
- 1 can white frosting I used vanilla
- Green food coloring I used Wilton gel, leaf green
- 2 C coconut flakes
- 2 packages Peeps
- Jelly Beans or Candy Eggs for decorating
Instructions
- Bake cake according to box. Cool completely.
- Color your coconut and frosting with food coloring. A few drops to each should be enough.
- Frost cake with frosting, making sure to frost sides too, so the Peeps will stick.
- Line peeps up around edges of cake, pushing against cake to ensure they will stick to the frosting.
- Sprinkle coconut over top to create "grass".
- Add a few jelly beans or candy eggs to decorate the top.

Did you use sweetened or unsweetened coconut ?

I usually use unsweetened if I'm using a really sweet frosting. Either one works, it just depends on your level of sweetness you'd like the cake to have.
