    Mango Salad

    MANGO SALAD

    Yesterday, I teased you by telling you that I served my Coconut Chicken Tenders with a Mango Salad on the side and I didn't even include the recipe for it.  I know, I'm a stinker like that.  Even though I wanted to give you both recipes together, it's tough to get two recipes on one post without it being too long and clunky. The other thing is I didn't want you to think that this Mango Salad is only good along side the chicken, because it would be good along side anything you are grilling up, really.

    Since I made this last week, I have made it three more times.  I may or may not have been caught eating it directly out of the serving bowl with a spoon.  Don't judge me.  It could be worse. 

    MANGO SALAD

    The third time I made the mango salad, I actually used it more like a salsa and topped my entrée nachos with it (hint hint, that recipe will be coming soon).  I omitted the balsamic vinegar that time because I didn't think the balsamic would meld with my roasted vegetable nachos.  So as usual, it's versatile.

    Here's the only catch. You must use fresh fruit.  I mean, obviously you can make it with canned fruit but the best thing about this recipe is the freshness.  You just won't get that freshness from a can.  Plus, it's the perfect time of year to get fresh fruits at reasonable prices.  My grocery store had whole pineapples for $.99 each last week!  So it was actually more money for a can!

    I imagine, I will be making this a lot more in my near future.  I am anxiously awaiting my delivery of avocados from The California Avocado Commission.  Why, you ask, would the California Avocado Commission be sending me avocados?  Because, I was the week four winner of their #caavosnack Photo contest with my recipe for Bacon, Chicken & Avocado Quesadilla.  I know, I'm sorry, I'm totally tooting my own horn, but it is super exciting and I wanted to share my exciting news with you.

    MANGO SALAD

    Mango Salad

    Ingredients
      

    • 1 mango diced
    • 1 avocado diced
    • 1 ½ C pineapple diced
    • ½ red onion diced
    • Juice of ½ a lime
    • 2 teaspoon balsamic vinegar
    • 1 T cilantro chopped
    • Salt and pepper to taste

    Instructions
     

    • Place mango, avocado, pineapple, red onion in a large bowl.
    • In a small bowl combine lime juice and vinegar. Pour mixture over fruit. Add cilantro. Toss gently to coat. Season with salt and pepper if desired.

      This looks like a really interesting change from the more Asian-style mango salads I'm used to... love the combination of flavours you've used here, especially the balsamic. Yum!

      Tapping my foot impatiently for that nachos recipe.... 😉 I love mangos _ but I HATE cutting them, so I rarely ever make anything with them.

        Hahaha. Sorry, Lauren, I think you'll be tapping that foot until next week. I haven't had a chance to edit the photos yet! I am new to using mangoes and I had a heck of a time cutting them! But they're just so darn good, worth he hassle!
