    One Pot Mexican Turkey and Rice

    One Pot Mexican Turkey and Rice - A family friendly taco skillet meal made a bit lighter by using ground turkey instead of beef; ready in under 30 minutes!

    Add this One Pot Mexican Turkey and Rice to your list of must have weekday recipes.  Not only is it ready in under a half hour and made in one pan (so less mess) but it also stars lean ground turkey and black beans so you don't have to feel too guilty about devouring it.

    To keep this family friendly I didn't add too much spice.  I used the Mild Ro-Tel diced tomatoes but you can get a hot version.  It doesn't have to be Ro-Tel, I've seen that most of the diced tomatoes now come in varieties with diced chilies.

    I seasoned everything with a little bit of cumin and chili powder but if you don't keep those spices on hand just grab yourself one of those packets of taco seasoning and use that instead.

    One Pot Mexican Turkey and Rice

    Ingredients
      

    • 1 T Olive OIl
    • 20 oz Ground Turkey
    • 15 oz Black Beans canned, rinsed and drained
    • 15 oz Corn canned, drained
    • 10 oz Diced Tomato w/ Chilies Ro-Tel recommended
    • ½ teaspoon Garlic Powder
    • ÂĽ teaspoon Salt
    • â…› teaspoon Black Pepper freshly ground
    • ½ teaspoon Chili Powder
    • ÂĽ teaspoon Cumin ground
    • 2 C Instant Brown Rice
    • 2 ½ C Chicken Broth
    • 1 C Shredded Cheddar Cheese
    • Optional Toppings: Guacamole / Sour Cream

    Instructions
     

    • Heat olive oil in a large skillet, over medium/high heat. Add turkey and brown (about 5 minutes).
    • Stir in garlic powder, salt, pepper, chili powder and cumin.
    • Add in beans, corn and tomatoes. Stir in the rice and add in the broth. Stir well to make sure rice is distributed evenly (or close to it).
    • Bring to a boil. Cover and reduce heat to low. Simmer 10 minutes.
    • Sprinkle cheese over the top and replace cover until cheese is melted (about 2 minutes).
    • Top with guacamole and/or sour cream.
