    Slow Cooker Chicken Caesar Pasta - I've taken my popular recipe for Chicken Caesar Wraps and turned it into an easy, family friendly pasta dinner.

    Guess what everyone?  We've got ourselves a high school graduate over here!  That's right, this weekend, our oldest, graduated high school.  Crazy.  It still hasn't set in.  Anyway, you can imagine, the last week or so has been complete craziness around our house. 

    Amidst the festivities for the week was awards night.  We knew that Tori was getting awarded at least one scholarship (surprised and elated to find out it was actually two!) so we had to attend the presentation.  I knew the night would run long (sooooo long) and I wouldn't feel like cooking late into the night, so making a meal in my slow cooker just seemed like the practical thing to do.  And, since it was Tori's big night, I decided I would make something I know she loves.

    Slow Cooker Chicken Caesar Pasta

    Her favorite thing is Crock Pot Chicken Caesar Wraps but I had NO tortillas!  I realized this, of course, only after I had the chicken going in the slow cooker!  So, as usual, I just rolled with it.  Thankfully, my cabinet is full of, oh, I don't know, approximately 27 boxes of various pasta and well, pasta goes with everything, right?  Right!

    So if you are familiar with my Crock Pot Chicken Caesar Wraps, you know how easy of a recipe it is. The only difference in this recipe is that I tossed it with pasta and I also threw in some arugula for the green to replace the lettuce.

    Slow Cooker Chicken Caesar Pasta

    Slow Cooker Chicken Caesar Pasta

    Ingredients
      

    • 3 boneless chicken breasts
    • 2 C vegetable or chicken stock or broth
    • ÂĽ C chopped parsley fresh
    • Âľ Caesar dressing
    • ½ C parmesan cheese shredded
    • ½ teaspoon freshly ground black pepper
    • 4 oz arugula
    • 12 oz ziti or other short pasta

    Instructions
     

    • Line slow cooker with a liner or non stick spray.
    • Place chicken in cooker and pour in stock (broth).
    • Cook, covered, on low for 4 hours.
    • After 4 hours, remove chicken. Drain liquid from cooker. Shred chicken and return it to cooker.
    • To chicken, add pepper, parmesan cheese, parsley and dressing. Stir to combine well and turn cooker back to low while pasta is being prepared.
    • Prepare pasta according to package directions, reserving 1 C of cooking water before draining pasta.
    • Turn off slow cooker. Add drained pasta to the chicken mixture. If mixture is too thick, add a little of the pasta cooking water. Stir in arugula. Serve with additional parmesan cheese if desired.

        I love arugula too. Plus I feel like slow cooker recipes, always need a fresh bright ingredient thrown in to keep it lively!
