As I have said before, I really love the idea of freezer cooking but I just never seem to actually do it. The only time it seems worth while to me is when something is on sale for super cheap at the grocery store. I do not feel the need to cook a freezer meal each day of the week but it is helpful to know there are a few meals in the freezer for some lazy days.
Below is the recipe for 2 dinners. You will want to split the ingredients to two large freezer zip lock bags.
Ingredients:
6 lb sirloin beef or other beef for slow cooking
2 Cups water
6 scallions, chopped
½ C soy sauce
4 teaspoon beef boulion granules
4 teaspoon minced ginger
4 teaspoon minced garlic
fresh broccoli florets (as many as you like) - for cooking day
Add all ingredients to bag |
lie flat to freeze, once frozen you can stand it up if you don't have the room to leave flat |
TO ASSEMBLE:
- Trim beef into thick strips (do not cut into bite size chunks, it won't hold up in the slow cooker), about 2x5 inches. Divide meat evenly into the bags.
- Add the following to each bag, 1 C water, 3 scallions, ¼ C soy sauce, 2 teaspoon boulion, 2 teaspoon ginger, and 2 teaspoon garlic.
- Seal and freeze each bag.
TO COOK:
Take bag out of freezer and put in fridge the night before you want to cook it.
In the morning dump the bag into crock pot and cook on low 5 hours. Add broccoli about a half hour before serving.
Serve over white rice.
ALTERNATE:
Put contents of bag in crockpot directly from freezer. Cook on low 7 hours or until fork tender. Serve over white rice.
