    Stuffed Chicken Thighs - Easy Comfort Food

    If an easy yet comforting dinner is what you're in the mood for, then you've got to try this recipe for Boneless Stuffed Chicken Thighs.

    This dinner as easy as wrapping boneless skinless chicken thighs around some prepared stuffing, topping it with gravy and baking it in the oven.

    This boneless chicken thigh recipe might be one of the easiest meals I make. Much like my stuffed pork tenderloin, it looks impressive but is made easy with some shortcuts.

    Ingredient list

    • Chicken - boneless, skinless chicken thigh
    • Stuffing - any prepared stuffing will do
    • Gravy - a simple jar of chicken gravy or if you have leftover homemade turkey gravy you can use that too
    • Milk
    • Salt & Pepper

    If you want to use boneless chicken breasts, you can. Simply pound some boneless chicken cutlets until thin with a meat mallet and then follow the usual instructions.

    I do prefer this recipe with the boneless thighs because they stay tender and juicy. Boneless breasts can quickly get dry if you aren't paying attention and overcook. So, if you are using boneless breasts, be sure to use a thermometer so you know exactly when they're ready!

    Serving suggestion

    I think it makes an impressive presentation to serve the chicken thighs over a mound of mashed potatoes.

    I also like to serve a green vegetable side dish. Something like air fryer asparagus or air fryer broccoli are my favorite choices.

    Preparation

    1. Start by trimming any yucky bits off the chicken. Then open the thighs up, the tend to come packaged up, almost folded over.

    2. Next scoop some of the stuffing into the center of the chicken thigh and fold it over. You may not get it folded all around and that is okay, this is a rustic style dish so just do as you can.

    3. Place all the stuffed chicken thighs in to a baking dish. Sprinkle the chicken with salt and pepper. If you have extra stuffing just arrange it all around the chicken.

    4. Combine a jar of gravy with milk and pour on top of the chicken and bake until chicken reads 165 F when tested with a quick-read thermometer.

    Stuffed Chicken Thighs

    Ingredients
      

    • 1.5 lb chicken thighs about 6 thighs, boneless & skinless
    • 1 18 oz jar chicken gravy
    • ⅓ C milk
    • 1 teaspoon seasoned salt
    • ½ teaspoon black pepper
    • 1 - 6 oz box instant stuffing mix + ingredients called for on package

    Instructions
     

    • Preheat oven to 375.
    • Prepare stuffing as directed on package.
    • Place each thigh, laying open and place a scoop of prepared stuffing in the center. Roll chicken as best as you can and place in a 9x13 baking dish, seam side down. Spoon remaining stuffing around the chicken in the baking dish.
    • Season chicken with seasoned salt and pepper.
    • In a small bowl, whisk together gravy and milk. Pour over chicken.
    • Cover with foil and bake 25 minutes.
    • After 25 minutes, remove cover and continue to cook an additional 10-15 minutes, or until chicken is cooked thru. Always check chicken temp with a quick read thermometer.

      Made this tonight! I didn't have the premade gravy jars so I mixed chicken broth, a can of cream of chicken & cream of mushroom soup and two packets of brown and onion gravy. Kitchen smells delicious!

      I made this and it was easy and delicious. I didn’t use milk however, because I wasn’t sure why you added it. Does it make much difference?

        It just adds a little creaminess to the gravy. Not sure it makes a huge difference either way.
