Wow, that title is quite wordy isn't it? I just couldn't cut it down. I wanted the title to explain that there is avocado, sure, but you need to know about the goat cheese too. I also didn't want you to think this was a pick up and bite into kind of sandwich. It's open faced, cut it up and eat it with a fork and knife. I mean you are welcome to pick it up and eat it like a beast (because you'll want to), but you will make a mess. C'mon, it's a runny egg. Get yourself together and grab a plate, a fork and a knife and delight in an Avocado and Goat Cheese Open Faced Breakfast Sandwich. Oh, and don't forget your coffee. You know this girl loves her coffee.
It's not often I post breakfast. As a matter of fact, I can't even remember if I ever have. But, you may or may not remember that a few weeks ago The California Avocado Commission chose one of my quesadilla recipes as a winner in their snack contest. My prize, other than major bragging rights, was a case of beautiful California Avocados. While I love avocados, an entire case is quite difficult to use up while they are ripe, especially because not everyone in the family has a love of avocados.
Of course, I've made tons of guacamole. I adapted my recipe for Layered Ranch Taco Salad to add a layer of avocados and that had me wishing I had done that from the get go because it was an awesome addition.
My husband was joking that he was issuing me the challenge to make avocado related meals for breakfast, lunch and dinner. I immediately fired off recipes for all of them to him and then we forgot about it and moved on with our day. The next morning though, I thought it would be fun to come up with a unique breakfast spin. I was originally thinking some sort of breakfast tostada with guacamole but thought that was too "expected".
I scoured my fridge and found a package of unopened goat cheese. I have no idea what I was originally planning on using it for, but I knew it would work well with the avocado, so all my other plans for it would have to wait.
All I did was mash up an avocado, cut in some goat cheese and add some salt and pepper. Then I toasted up an English muffin and fried an egg and put it all together. I like my eggs nice and runny so I had to serve this open faced. If you want to go for a "pick it up and bite in" kind of sandwich, just cook your yolk all the way through.

Avocado and Goat Cheese Open Faced Breakfast Sandwich
Ingredients
- 1 avocado
- 2 oz goat cheese
- Salt and pepper to taste
- 1 teaspoon butter
- 1 egg
- 1 English Muffin
- Optional: a pat of butter for English Muffin
Instructions
- In a bowl, mash avocado with a fork. Add goat cheese and continue mashing until well incorporated. Season with salt and pepper. Set aside.
- Melt butter in a small fry pan over medium low heat. Crack egg gently into pan. Cover and cook for 4 minutes. Flip over and cook for 1-2 minutes (or to your liking).
- While egg is cooking toast English Muffin.
- Spread some avocado mixture on both halves of muffin. Place egg on top of one half. Cut into egg and use muffin to sop up the yolk. Enjoy!

Ah, so welcome to where my life has been. Not that I'm complaining about all the avocados at home either but a case is a lot! Funny enough I have a similar avocado recipe coming up at the end of the month but sans the cheese. Avo and goat cheese is such a great combination though!
