    One Pot Pasta with Chicken Sausage - A hearty weeknight pasta meal that is not only ready in under 30 minutes, but is prepared in one pot for easy clean up!  Omit the sausage for a meatless version.

    I'm sure I'm not the only one who has been seeing a ton of One Pot Pasta recipes on Pinterest lately, right?  I finally clicked on one (One Pot Wonder Tomato Basil Pasta by Apron Strings) the other day and heck, it sure did sound easy! 

    Turns out, One Pot Pastas ARE incredibly easy.  So easy in fact that my 3 year was able to do most of the work!

    All of the recipes I've been seeing floating around do not contain meat.  Which is fine.  For other people.  No, seriously, sometimes we eat meat free, but it's not often.  You can totally make my version into a meat free version by omitting the chicken sausage.  No big deal. 

    What is a one pot pasta?

    Exactly as it sounds. It is a pasta dish that is all made in one pan. These one pot meals can include meat or not. Add veggies, or not. These yummy dinner recipes are totally customizable.

    You might be wondering why I love one pot pastas so much. Well, the obvious first reason for me is less pans to wash. Because I'm browning the chicken sausage right in the same pot as I'm cooking the veggies and pasta, that's it, only one pan to clean.

    The other great thing about this recipe is it is ready in under 30 minutes. If you need a family meal quick, this is it.

    How to make this one pot pasta

    • Chop the chicken sausage and brown it in a large pot.
    • Add all other ingredients except the spinach.
    • After 10-15 minutes, give it a stir, plop in the spinach, cover it and cook just a few minutes until spinach is wilted.
    • Eat it and smile!

    Is this recipe healthy?

    Well, I always think the term "healthy" is relative. For me it's a good option as it has under 400 calories per serving and contains protein. It is also fairly low in fat and contains a small amount of fiber. You decide what is "healthy".

    Recipe Tips / Notes

    • Taste for salt. Depending on the type of stock/broth, diced tomatoes and sausage, the salt content varies, so always taste and add if needed.
    • Not into chicken sausage? You could toss in some rotisserie chicken as a substitute.
    • The recipe calls for the Italian seasoned diced tomatoes but I have also made this with diced tomatoes with chiles and it was pretty great and changed up the flavor profile.
    • Check your pasta after 10 minutes. It can over cook quickly, so keep an eye on it.
    • It is normal to have some broth left when pasta is done cooking. As you add the spinach and cook a little more, the liquid will be absorbed.

    Ingredients
      

    • 1 Tablespoon olive oil
    • 12 ounce chicken sausage precooked, sliced (I used garlic variety, but flavor is your preference)
    • 1 cup sweet onion sliced
    • 2 cloves garlic minced
    • 14 ½ ounces canned diced tomato with Italian seasoning *see notes
    • 4 ½ Cup vegetable stock or broth
    • 12 ounce pasta dry, preferably linguine
    • 6 ounce spinach fresh
    • Optional: parmesan cheese grated

    Instructions
     

    • Heat 1 T olive oil in large pot over medium/high heat. Add cut chicken sausage and brown, about 5 minutes.
    • Add onion, garlic, diced tomato (with liquid), pasta and stock to pot with sausage. Cover. Bring to a boil. Reduce heat and simmer 10-12 minutes.
    • After pasta is cooked and most of the liquid is absorbed, stir in spinach and return cover. Cook another 3-5 minutes, just until spinach is wilted.
    • Stir well to combine.
    • Serve with grated parmesan cheese if desired.

    Notes

    *flavor profile can be changed up by using diced tomato with chiles
